I have two slowcookers tha I use pretty often. One is a 6 qt programmable Smart Pot (I think it by Slower Cooker/Rival--but I'm at work, and I can't remember exactly). I bought it at BBB. The other one is a 4 qt Hamilton Beach--it isn't programmable. I also bought it a BBB. I find both very useful--they don't substitute for my oven, but I do find them useful and totally w/o problems. I use the large one for stews, eg, I recently made what my guests thought was a terrific Osso Bucco. I use the small one for overnight oatmeal, apple butter, and to prepare carmelized onions for onion soup. I had both of the crock pots going making turkey stock with the turkey carcases after Thanksgiving. BTW, there are some terrific (healthy) slow cooker recipes in Cooking Light (on their website), in Eating Well magazine, and then Cooking Light has a slow cooker cookbook that I bought recently from Amazon. Interesting reading about the AC slow cooker. Honestly, I was tempted by one feature, and that is that you can brown meat in the slow cooker dish on the stovetop before proceeding to the slow cooking. That seem's very nice to me since I often brown my meat in a skillet before dumping into the ceramic slow cooker dish. But I can't really justify buying yet another toy....

piper--Haven't checked out the thread at cooking yet, but will go there next. Your question about the largest crock does seem valid. A lot of that large crock is outside of the cooking surface. I found a forum reviewing crocks (lord knows where). Some people liked this cooker, some didn't. One gal was very scientific. She used a thermometer and checked temps using water in the various sized crocks, at the different settings. She determined that she liked the crock but only if she "fooled" the cooker by using different settings for different sized crocks. For instance--she used the 4 quart setting for the 6 quart crock and had good cooking results. Who knows. All I know is that I do not need a huge slow cooker (one child grown, one at college, two littles at home). Do not get the versaware. That thing is worthless. I do not want to buy 10 slow cookers and put each one in a garage sale to find one I like--how about you? I saw this 3 in one at Target Sunday--and the control seemed flimsy--like the dial might fall apart easily. Off to the cooking forum to find that thread. Thanks!

I have a 1980's Hamilton Beach slow cooker - very large, several gallon capacity, thick pottery crock pot. It will automatically switch from "Hi" to "Low" after a few hours if I set it on that mode. Because it's so large and because there's just the 2 of us to cook for mostly at this stage of our lives, I bought a smaller Crock-Pot brand slow cooker. Oval-shaped (which I like), but it doesn't have the automatic switch-to-low feature. Plus, the "low" setting is too "high" just to keep things warm without continuing to simmer. My experience with it so far is it cooks too hot to be called a "slow-cooker" lol. I'm not opposed to spending money on good quality cookware, but I honestly can't bring myself to spend over $250 for a slow cooker and I really don't like the way the All-Clad looks. There's a reason you cannot find a comparable cooker today. Those old cookers weren't safe. The problem is, those old cookers didn't get hot enough to cook food safely--so the newer ones are hotter to prevent the growth of bacteria. I don't think you're going to be able to find a new crockpot that cooks as slowly as those old ones do. And that's a good thing--your family's health is far more important. Look, why not adapt your crockpot recipes to FAST cooking. I haven't found a crock pot recipe yet that I can't convert into a 30 minute (or less) meal. The less time you run your appliances, the more energy $$$ you save. The faster you cook your food, the more nutrients and flavor you conserve. I'd rather cook 20-30 minutes in the evening, and serve my family healthy, fresh food, than save 5 minutes of my prep time and give them something that's been heating all day. Isn't that the complaint people generally have about cafeterias and other inexpensive restaurants? That the food has been sitting around and sitting around? If it's not good enough for you when you go out to eat, WHY would anyone consider that adequate for the family they love? Sorry, I get a little over-the-top about crockpots. It's such a wasteful (in so many ways) way to cook food, and I'm such a proponent of fresh, nutrient-packed dishes for my family, that I really become passionate when this topic comes up.
