Water Line For Refrigerator

I'm completely at a lost. I am moving my refrigerator from one side of the kitchen to the other. We have a "U" shaped kitchen and it's literally going on the opposite side of where it is now.

We've received quotes from 3 plumbers and the prices are $600, $750, and $850 for doing the same exact thing except they each have a different idea of how to do it. All quotes include running the water line, install of sink, faucet, GD and DW.

$600 plumber:

- wants to use PEX line

- will install line after bottom cabinets are in but before granite and will run the line then.

$750 plumber:

- wants to use copper line

- will install before bottom cabinets are in and will tie the line to the wall

$850 plumber:

- wants to use copper line

- will install after bottom cabinets are in and will run line under cabinets by the toe kicks. (not sure what he will do when he get to the range section as there is no toe kick)

I need to know which is the best way to do this. HELP!
