I adapted Sherry's Spinach Brownies (a strata of sorts) to muffins. I cut down the cooking time. The first time I did this, I made a test muffin using a small ramekin that I greased. Perhaps you could do the same test first.

I think they'll be fine, cube the bread and pour the egg mixture over. They'll bake faster so watch them.

About how long do you think to bake them? About half an hour?

Bake them until they are set....depending on how cold or warm the stuff is when you put it in.
Since that cheese strata is so good cooked in a 9 by 13 pan.....why are you wanting to cook it in muffin cups??
tell her you can bake in in muffin cups but it will be better if you don't!

lol, lindac -- she came back in from "emptying the dog" just as I was reading your post, and I tried telling her that. She still wants the cute little individual servings, though.

I have had this Rachael Ray recipe saved for a while - I know its different and she makes it in mini-cups, but maybe it will help you figure out the baking time. She bakes the minis at 375 for 12 minutes.

Thank you all. I baked them at 350 for 25 minutes, and they were fine -- both the ones in the muffin tin and the 2 extra in somewhat larger ramekins. The big ones were not as dry, but they were equally good. They liked them so much, they decided to come over and eat them again before they all go back to their different colleges.

woodie2, I bet your temp and time would work, too.

DD and her 5 friends had a wonderful brunch: the strata cups, apple pancakes, biscuits, juice, coffee, gingerbread men the girls made last night, all the Christmas cookies people gave me at my office, and 2 flavors of Columbus's own Jeni's ice cream. They all just left -- and they're coming back after dinner tonight to eat the rest of the cookies and ice cream.

We were all hoping that Christians have as much fun on Christmas as we did!

I'm glad that strata turned out well, I'm going to have to remember that idea for the office breakfasts we occasionally have. Your brunch menu sounds delicious, especially the gingerbread cookies and ice cream part, LOL.

loves2cook4six, here is what I did. Super easy. I based it on a few recipes I found, plus what I had in my house, so feel free to personalize it, too. A lot of recipes call for ham, which we don't eat, but I bet it's good. I had some roasted pepper strips in my "goodies" drawer in the freezer, and that added color and flavor. Mushrooms and asparagus would be great, too. Just make sure to pat whatever you use dry.

Gellchom Jr.'s Favorite Mini-Stratas

about 3 cups cubed bread (I used a country white, including crusts)
3/4 cup (or more) shredded cheddar
chopped roasted sweet red and green peppers (and/or raw peppers, pimiento, mushrooms, asparagus, or whatever you have on hand)
a few sliced scallions (or you could use any onions)
3 eggs
3/4 cup milk (I used skim)
pinch each salt and pepper

In a bowl, toss together the bread cubes, cheese, vegetables, and scallions. Divide evenly among greased muffin cups or ramekins.

Whisk together eggs, milk, salt, and pepper. Pour over bread to soak thoroughly. Cover with plastic wrap and refrigerate for at least 4 hours or overnight (up to about 16 hours).

Bake at 350F (180C) for about 25 minutes, or until set. Let stand for 5 minutes.
