Ending the Year on a Sweet Note (pix)

We're having friends come over for dessert tomorrow evening, and here is a photo of one of the desserts I'm making.

It's a variation of the Berry Trifle over at allrecipes, but it's been re-worked as Amaretto Berry Pound Cake.

Recipe

Make a pound cake, cool, slice lengthwise

2 pkgs frozen mixed berries (or fresh, if you can afford it $$ !)

Amaretto de Saronno

1 pkg instant French vanilla pudding mix

1 C milk

one can sweetened condensed milk

one 8 oz container of creamy cool whip

In medium bowl, combine pudding mix, 1 C milk, the can of sweetened condensed milk and the entire tub of cool whip. Stir or beat on low with an electric hand-held mixer.

In a square serving pan, put one layer of the pound cake. Sprinkle on Amaretto to taste. Add half the berries.

Pour on half the pudding mixture and gently spread it around.

Do the next layer the same way...pound cake, Amaretto, then berries, and the remainder of the pudding mixture.

Refrigerate overnight if using frozen berries.

You can doctor it up with fresh whipping cream and garnish with berries, mint, whatever strikes your fancy.

It's pretty good and comes together quickly!
