Simple Passed Down Recipe?

My MIL was Hungarian. In spite of the fact that I thought she was just a big meanie, she was a great cook. Everything she made was so flavorful. I loved her Pea Salad. I've tried to remember everything that was in it and I make it every chance I get.

Pea Salad

1/2 Bag of Frozen English Peas

1 Hard boiled Egg Chopped

1 Cup Shredded Cheese

1 Bunch of Green Onions Chopped

2-3 Stalks of Celery Chopped

1/4 Cup of Mayo

Salt and Pepper to Taste (I garnish w/Paprika)

Gently mix together.

Last time I had a pea salad it was just peas, velveeta cheese and mayo, this sounds much better! I think I'll be giving this one a try soon.

Thanks for sharing! I "miss" my MIL, she is still alive, but is progressing further into Alzheimer's, (she now calls me by DH''s exs name, even though we've been married 2x longer than they were)

Unfortunately, bread machines use the direct dough method (the fast modern method) to make bread, and thereby you miss many aspects to increase "flavor", which is why I try to use the sponge method, especially with 100% whole wheat bread. The sponge in "Mildred Bread" can be as little as 2-1/2 hours, but I generally let it sit overnight for convenience. I also get some additional flavor by using homemade kefir, which is a fermented dairy product similar to yogurt. Yogurt and buttermilk also add a lot of flavor and tangy taste. A standing period is a valuable step to the texture, as well as flavor. The loss of flavor is even more prevalent if using the Quick (1-hr.) Cycle. Another way to add flavor is to remove the dough from the bread machine as soon as the kneading is done and retard it in the refrigerator. Pan it and bake it in your regular oven. "The cold forces the yeast into dormancy so it is no longer gobbling up all the available sugars. The bacteria then can feed and produce some of their flavorful acids, which add subtle complex flavors and enhances keeping quality." When it comes to adding vital wheat gluten, I personally don't use it unless there is a high ratio of low-gluten or gluten-free flour in the recipe. Too much gluten will make the bread tough, so "more" isn't necessarily "better". There is more than enough gluten in most whole wheat flour milled from hard wheat (winter or spring varieties) and even all-purpose flour, to make a great loaf of bread without the additional gluten. The rule of thumb is to add 1 tablespoon of vital wheat gluten for every cup of low-gluten or gluten-free flour that is being used in your recipe. Bagels and pizza dough can also benefit from the added elasticity of high-gluten flour, but it's not necessary if you are using high-protein bread flour. -Grainlady

Hi Mary: I haven't been in the FF for a long while. Thought I'd take a peep and saw your Post. Here is my recipe. Always glad to help. Pizza Dough An alterative to baking on a stone is to use pans. A 12 inch round pizza will take from 8 to 12 ounces of dough. According to thickness you want. After the dough is made weigh it out and roll into balls. Oil the pans and place a dough ball in the pan and flatten slightly, working the dough towards the side of the pan, with the palms. Then let it rest a few minutes. Repeat this every so often until the dough reaches the side and up, enough for a crust about Â½ inch. Let it raise slightly , pinch the dough all over, with a fork and put into the oven to bake at 400 deg. If it bubbles while baking pinch it with a fork again. When light tan specks show ,take them out onto a rack to cool fast. Then you can use them right away or freeze , to use later. When cooking the Pizza, place the Pre Baked dough back in the oiled pan , Or cook on your Stone. put a latel of sauce on the dough and swish it around, sprinkle some Parmesan or Romano , put it in the oven for a few minutes. Take it out and spread the topping of your choice and the Cheese Topping. A good topping cheese is a mixture of Mozzarella and Provolone chopped and mixed. The provolone gives it a good flavor and doesn't get like rubber when it cools. I use all Provolone. A little trick for baking. Keep a cup of water and brush handy, to baste parts that are cooking too fast. If you can get new pans, they have to be cured in the oven, so they won't stick, unless you are using NS Coat them with oil and bake them for at least 6 hours. Never clean them with soap and water. Just rinse with water & wipe with a paper towel. Dough recipe: 1 cup of warm water (not hot) 1 Package of rapid rise yeast 1 tablesps sugar ,in a half cup of warm water 1/4 Cup of Veg. Oil 1 teasp.Salt About 3 1/2 cups Flour Â½ cup of Whole wheat flour Place in a mixing bowl, the Water, 1 cup of flour, wheat flour , yeast if risen Add the oil and salt and more flour. Add enough flour to make a soft ball of dough, that doesn't stick to your hands. Knead until smooth. Put it back in the bowl , Smooth side up and Rub on some Veg. Oil Cover and set in a warm place to rise until it doubles in bulk. I put it in a warm oven, Covered with a damp towel. It rises in about 1 hour. When doubled, punch it down and knead it well. Divide into Balls , about 11 to 12 ounces and place in oiled pans. 12" round Dough should be about 3/16 " thick on the bottom and about Â½" around the edge. Grainlady, I've got to try that recipe. It sounds delicious. I use Alton Brown's granola recipe but adapt it to our preferences. I never use coconut because my husband doesn't like the texture. And I don't use cashews because they're too expensive. Instead I used sliced and slivered almonds, peanuts, sunflower seeds, and pumpkin seeds -- enough to measure 2-1/2 cups of nuts/seeds total. I always add 1-2 tsp. of vanilla. Depending on my mood, I may also add 1-2 tsp. of cinnamon or apple pie spice or a tsp. of maple extract. I never add dried fruit to it either. Lately I've been following the Cook's Illustrated technique (not recipe) for granola chunks. It's so easy but results in gigantic chunks that we use for snacks rather than breakfast cereal. You line a jelly roll pan with parchment paper and dump the wet, unbaked granola mixture in it. Then you use a spatula to press down the mixture, kind-of like you were making a gigantic granola bar. You bake it at 325 for 35-45 minutes without any stirring. (I usually bake mine longer because we both like our granola really toasty.) When the granola looks toasty enough for you, take it out of the oven, and let the pan cool on a rack for about an hour. Then just lift up sections and break the granola "bar" into chunks. Big or small -- it's up to you. I love the super toasty chunks as an afternoon snack. I just pile a few on a napkin and munch away. Granola Recipe courtesy Alton Brown Serves: 6 servings 3 cups rolled oats 1 cup slivered almonds 1 cup cashews 3/4 cup shredded sweet coconut 1/4 cup plus 2 tablespoons dark brown sugar 1/4 cup plus 2 tablespoons maple syrup 1/4 cup vegetable oil 3/4 teaspoon salt (I omit) 1 cup raisins Preheat oven to 250 degrees (I follow the CI instructions for baking). Combine both mixtures and pour onto 2 sheet pans (I use only one pan, pressing the mixture down). Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color. How true - things and cultures change, over the years, partly resulting in some people's treasures ... ... are others' ... less than treasures. Especially when the others are of a succeeding generation. And if you think that the differences are major for this generation - imagine what it'll be for the next, with not only the surface things, but more of the deeper issues of our culture changing so much more rapidly. Hi Nancy Lee, Shouldn't it be that, if your mother left the house to the four of you equally, that either the current sibling who's resident buys out the other three of you, or pays you 3/4 rent, or interest on your share of the value of the house, either of which would likely increase over the years. Or - sells it, then pays everyone his/her share. If he doesn't like that scenario ... what does he have to offer as an appropriate alternative? Maybe the others of you could arrange for a bevy of skunks to take up residence in the currently unoccupied portion of the dwelling? Good wishes for getting an appropriate resolution to the issue. ole joyful

This was passed on to me by a neighbor who moved away from here about 15 years ago....it's sooo good and we have it a few times a month.

Spaghetti with smothered onions

2 tablespoons butter with 2 tablespoons extra virgin olive oil
1 1/2 pounds onion, sliced very thin, about 6 cups
Salt
Black pepper
1/2 cup dry white wine
2 tablespoon chopped parsley
1/3 cup freshly grated parmigiano reggiano cheese ( I just use fresh parmesan cheese)
1 to 1 1/2 pounds pasta

1. Put the butter and olive oil, and the onions with some salt in a large sautÃ© pan. Cover and turn heat to very low. Cook for almost an hour until the onions become very soft.

2. Uncover the pan, raise the heat to medium high, and cook the onions until they become colored a deep, dark gold. Any liquid the onions may have shed must now boil away.

3. Add liberal grindings of pepper. Taste and correct for salt. Bear in mind that onions become very sweet when cooked in this manner and need an adequate amount of seasoning. Add the wine, turn the heat up, and stir frequently while the wine bubbles away. Add the parsely, stir thoroughly, and take off heat.

Ahead-of-time note : You can cook the sauce entirely in advance up to the point where you add the parsley. When you are nearly ready to toss with the pasta, reheat the sauce over medium heat and add the parsely just before draining the pasta.

4. Toss with cooked drained pasta, adding the grated Parmesan. As you toss, separate the onion strands somewhat to distribute them as much as possible throughout the pasta. Serve immediately.

Oh my heck!!! I haven't had pea salad in YEARS! I had forgotten all about it. I will be making it this weekend. Thank you!

The spaghetti with onions looks pretty tasty too. Hmmmm...I will be busy making new things this weekend.

I make a pea salad very much like that one, Gayle. I use the petite frozen peas...you don't cook them, chopped purple onion, chopped celery, a handful of chopped bacon, and dress with mayo thinned with Italian dressing, and top off with a handful of peanuts.

Here is a very simple recipe that is very good. And I also use the same dressing on it:

Shrimp Cole Slaw

Shredded cabbage with purple or green onions. A little grated carrot added for color.

Small whole boiled shrimp...I use large ones and cut them up.

Dress with mayo thinned with Zesty Italian dressing.

I like this because I don't like sweet cole slaws. It is great with some saltine crackers. This was a house special recipe of a restaurant in the area that closed about 25 years ago. Everyone wanted the recipe, but they would never give it out. Bet folks had no idea it was so simple! :)

I LOVE pea salad! I don't have a recipe, but make mine very similar to that recipe, Gayle. I use the whole bag (16 oz) of peas and another egg and more mayo, but about the same amount of everything else.

Gwanny2three, I make a recipe similar to that one too. I use
zuchinni and slice it and brown it very brown in some olive oil. Then I just toss it with linguinni and add a good quality parmesean cheese. Sometimes I add onions and mushrooms and saute them the same and add to the linguinni. I got that recipe from a PBS fund raising special they did on comfort food.

Petit Pois Salad

I pound frozen tiny peas, raw
1/3 cup chopped celery or water chestnuts
4 hard cooked eggs, chopped
3 dill pickles, chopped
1 small onion, chopped
1/8 tsp pepper
1/4 cup mayonnaise
1 tsp prepared mustard
Â½ tsp hot sauce
Parmesan cheese, optional

Combine first 6 ingredients. Combine rest of ingredients and blend the two mixtures. Garnish with parsley. Cheese may be mixed with the peas. If so, use 3 Tbls. Or sprinkle on each serving. Attractive served in a tomato shell.

I found this recipe in a newspaper many years ago. Still have the now-yellowed clipping. When I have served it it is always liked.

I think I posted it here on the KT one Christmas time.

My mom's pea salad--
2 cans La Seur early June peas, drained
4 hard boiled eggs, chopped
4 garden ripened tomatoes, sectioned
1/4 pound shrimp --either tiny shrimp or cut into bite size
1/2 tsp paprika
1/4 c Del Monte sweet pickle relish
1/8 tsp prepared mustard
1/2 to 1 c mayonaise
1/4 to 1/2 c chopped pecans

Place tomato sections on dinner plate. About 1 tomato per person.

Mix rest of ingredients and pre chill. Put a large spoonful on the tomato sections.

I love Pea Salad, thanks for sharing variations. I get tired of bad Potato Salad, I only like my own recipe. OK! I like my BF's (what she calls) Potato Salad, I call it a cut up baked potato with all the trimings. LOL! Sour Creme, Cheese, Chives and Bacon.

I like the idea of adding even more crunch with some type of nut. I thought of Pine Nuts, or Sun Flour Seeds.
