Questions about making Tourtieres

I have saved AnnT's recipe but I have a few questions:

- Is the pork ground? If so, do you grind it yourself or buy it already ground? How much fat should there be in it?

- Are the potatoes mashed, or diced or riced or? I'm not clear on this.

I told my husband I would make him a few meat pies for New Years (and freeze one as a gift for my brother). My MIL used to make them but I never learned how.
