Help! My recipes are at home!

Here I am in Chicago and I would like to make my Capuccino Mousse for dessert tomorrow. Since so many threads are missing, it didn't turn up in a search.

Hoping that someone has my Capuccino Mousee recipe saved and will be so kind as to post it here for me!

Since you said you don't have to worry about refrigeration, I am assuming it is available to you?

This could be made the day before and served in your clear cups. It's really yummy, too! I make it quite often.

Capuccino Mousse

1 T instant espresso coffee powder
1/4 c water
1 tsp unflavored gelatin
6 egg yolks
1/2 c sugar
2 c heavy cream
Bittersweet choclate curls for garnish

In small bowl, dissolve the coffee powder in water. Sprinkle gelatin over coffee, let stand for 10 minutes.
In a large metal bowl or top of a double boiler, beat egg yolks and sugar with wire whisk until combined. Place over gently boiling water . Cook, stirring rapidly with whisk about 10 minutes, or until egg mixture begins to thicken and coats a metal spoon (160F). Remove from heat.
Add coffee/gelatin mixture to warm egg mixture, whisk until combined. Beat egg-gelatin mixture with an electric mixer on medium speed about 5 minutes or until mixture is cool. Se aside.
Thoroughly wash beaters. In a chilled mixing bowl, beat cream with electric mixer on medium speed until stiff peaks form. Gently fold, on third at a time, into egg/gelatin mixture.
Divide among 8 chilled dessert glasses. Cover and chill at least 4 hours. To serve, garnish with chocolate curls.

My mom posted one of her favorites on that site... 2-Layer Pumpkin Pie http://recipesfromthehome.com/htms/dess01.html * 3 oz. package cream cheese, softeneed * 1 cup and 1 tbsp. half and half or milk * 1 tbsp. sugar * 1 1/2 cup thawed Cool Whip * 1 graham cracker crust * 2 packages instant vanilla pudding * 16 oz. can pumpkin * 1 tsp. cinnamon * 1/2 tsp. ground ginger * 1/4 tsp. ground cloves/li> Mix cream cheese, 1 tbsp half and half or milk, and sugar with wire whisk until smooth. Gently stire in cool whip. Spread mixture on bottom of pie crust. Pour 1 cup half and half or milk into bowl. Add pudding. Beat until blended. Let sit for 3 minutes. Stir in pumpkin and spices. Are you sure it was Cottage Cheese and not Ricotta? This has been a forum favorite for years..... Alexa LEMON RICOTTA PANCAKES serves 4 These pancakes, also adapted from Brunch: 100 Recipes, are the lightest pancakes you can imagine Ingredients 2 cups ricotta (about 1 pound) 4 large eggs, separated Grated zest of 1 lemon Pinch of salt Dash of pure vanilla extract 2 tablespoons sugar 1 cup all-purpose flour 8 tablespoons (1 stick) unsalted butter, melted, plus additional butter as necessary to cook the pancakes Maple syrup, warmed 1. Set an overproof platter or a baking sheet with a cooling rack on top of it into the oven and turn oven to 200 degrees. 2. Beat the ricotta and egg yolks together in a large mixing bowl with the lemon zest, salt, vanilla, and sugar. Stir in the flour and 7 tablespoons of the melted butter, working the batter just until homogenous and smooth. 3. Whip the egg whites with a whisk or handheld mixer until they hold a stiff peak. With a rubber spatula, gingerly fold half of the whites into the batter, then fold in the remaining half. Don't worry if the resulting batter is lightly striped with whipped whites-they keep the pancakes light and airy. 4. Heat a largecast-iron or nonstick skillet or griddle over medium-low heat for a minute or 2, then grease the pan with a teaspoon or more of the remaining butter. When the butter starts to sizzle, turn the heat up a touch and ladle in 3 ÃÂ½-to 4-inch pancakes. 5. After a couple of minutes, when the bottoms of the pancakes are somewhere between mottled and uniformly brown, flip them and cook another 2 minutes on the second side. Transfer finished pancakes to the platter in the oven and repeat with the remaining batter. 6. Serve the pancakes on plates with warmed maple syrup on the side.

There was a dill pickle recipe posted here long ago. The pickles tasted like Claussen's. It was for a small patch of home grown cucs and you added them as you got them. L2C46, Thanks! I googled, but only searched for capuccino mousse. Got a lot of recipes, but not the one I was looking for. Didn't even think to add my forum name and garden web in the search!

I'll make a note of that for next time!

Oh! Loves 2....I just now saw this post! My daughter lives in Berwyn, we probably drove right by you!

I would have loved to meet you, we'll definitely have to make sure to arrange it next trip! I try to get down there at least a couple of times a year, so maybe this summer....

A few of us had discussed a Minnesota get-together too. I am thinking of hosting something like that maybe in May or June. I'll post once I figure it oout.
