Can I put caramel in brownies?

I made some caramel and long story short, it didn't set. It IS tasty though so I can't just throw it away and I should not just eat it with a spoon because the kids will catch me.

I'm thinking brownies. Could I just dump half the brownie batter in, drizzle on some caramel ribbons, and then add the rest of the batter?

I'm sure this caramel goop would be good on other things too. Perhaps warmed over some English style pudding or apple pie...

(Oh, yeah, I've given up on the healthy eating Christmas idea. That was just silly.)

Yes, you can put it in your brownies. I have a recipe somewhere that does just that. I'm sure it will be delicious!

Bobby, use either kind of butter you have. If you have salted, use it and leave the salt out. I made a few changes to Marilyn's recipe to suit my tastes. I added a teaspoonful of baking powder, I wanted it more "cake like" and less dense. I also doubled the lemon juice, because I love lemon. And I pour the glaze over the bars while they are still warm, it kind of sinks in and when it cools it is a little "crackly". I like that texture. All in all, it's a great recipe and very adaptable. Leave the baking powder out or put it in. Double the lemon juice or not. Glaze while hot if you're in a hurry, wait until they cool if you aren't. I've never had a batch fail, no matter the changes, so I don't think salted/unsalted butter is going to make a lick of difference. Annie

I have had this pan for over a year. I use it all the time. It is NOT difficult to clean or use. Spray cooking spray on the top of the pan as well as the insides to keep batter from sticking if you get it on the rims when pouring it in. You'll have to reduce cooking time. All that metal, the brownies cook faster. It's trial and error, really. May want to reduce temp a bit (25 degrees), reduce time at least 10 minutes...then add baking time if necessary. The pan is heavy, but by no means is it unwieldly. It is very easy to clean if prepped with cooking spray. I put mine in the DW. Storage hasn't been an issue either. For the edge lovers, this pan rocks!

So many good suggestions - thank you. I am glad I'm not alone. I printed out the recipes posted by Nicole, Glenda and the one chi83 mentioned from Ina Garten. I noticed that Ina's recipe calls for an 18 x 12 pan and then the recipe says that it makes 20 large brownies - I normally get 16 brownies from my 9 x 9 square pan. If she cuts hers into only 20 brownies they must be huge! That's a real treat. lowspark - what a neat idea - a muffin tin. Never thought of that one or warming up the dry brownies and making a brownie sundae. I'll have to try buying several boxes of the same brand and then experimenting with the cooking time to determine the best one. I tend to buy whatever is on sale. I have tried the Ghirardelli's mix and it is really good. My son is stopping by the house tomorrow after work to celebrate his birthday and he asked for comfort food for dinner- a baked ham and mac and cheese. Since he doesn't care for icing I think I'll make 2 batches of brownies - one for our dessert and one he can take home. That way I won't be too tempted to eat them. If you have a candy mold, you can add chocolate to that and fill the center with soft caramel and then close the top with chocolate. If the mold is large enough, you can add pecan or other nut pieces. I use a silicon Madeline mold for this, and I put it in the freezer for ten minutes before I add the melted chocolate and then push the chocolate up the sides to make a cavity for the pecans and caramel. I put the mold back in the freezer before and after adding the caramel and pecans and after adding the last layer of chocolate. I have a lot of photos illustrating how to do this, if you are interested. You can use a mini-muffin pan if you do not have a chocolate mold, but you should brush the mold with butter before adding the chocolate if you think the pieces might get stuck.

I had some of my caramel sauce leftover and used it top my Decadent Chocolate brownies.

Another time I just drizzled the caramel over the batter and swirled it with a knife.

I've taken caramel that won't set firmly, rolled it into balls, refrigerated them, and then dipped them quickly into melted chocolate. If you cover them completely, the soft caramel won't leak out.

Jo, I like your idea but this stuff really won't even think about setting. I can't even finish writing my name in it before the F is gone.
