What to make with lobster meat?

I just received a few cooked and chilled lobster tails and claws that should yield about 2/3 to 3/4 pound of meat. I'd like to use them for dinner tonight. By the time I arrive home from work, I won't have time for anything too involved like my first thought of lobster ravioli.

Any suggestions? I have basic pantry supplies and spices, fresh parsley, celery, lemons, onions, garlic, etc. I also have a couple of avocados but no bread on hand.

Yes, I have an idea. Put the lobster meat in a bowl. Melt some butter. Lean over the sink with a paper towel handy. Pour the melted butter over the lobster. Eat. Wipe mouth with paper towel. (grin) Now, what's for dinner? Did you get any chicken out of the freezer??

Ruthanna, you may think this is nuts but I had the same issue a few weeks back and made Lobster Mac and Cheese. The family loved it! I thought it a waste of lobster but they loved it so much how can that be a waste?

I just made my standby Mac and Cheese recipe and added the lobster . They went nuts! LOL

It smells like Lye Soap, but not meat greases. I save all of the following greases and oils: Bacon Grease Hamburger drippings from my grill pan Ground Beef grease Shortening and/or oils used for frying meats. Oils used for any kind of fast frying (donuts, french fries, etc). Meat greases rendered from roasts (beef, pork, etc) and so forth. I don't fry very often, but I still save the oils and grease. It adds up faster than you might think! NEVER dump grease and oils down drains. Not only does this stop up sewer lines and septic systems, but it is a major cost to the public in city sewage systems repairs and maintenance and sewage processing plants. It pollutes the land and water systems...kills fish and other wildlife, creates algae in water ways, and more. Awful stuff. The chemical action in the soap making process removes the smelly odors of meat greases. Make sure you strain it well to remove all the bits and pieces. I just use my kitchen sieve. The soap will not LOOK like commercial stuff. Those are mostly detergents. This soap is wonderful. Leaves your skin soft. Gentle on clothes. The two commercial soaps that I know that are REAL SOAP are Castile and Ivory (or Ivory used to be real soap anyway). For JUST hand soap, you can add a little glycerin (found at all RX drug store counters), and omit the Kerosene. OPT. - Kerosene is not necessary for the recipe to work, but it makes the laundry soap better. Boosts the cleaning power. As mentioned above, you can add coconut oil (and/or other fancy oils) to make it more sudsy and feel softer. But, the purpose of this topic is HOW TO USE old MEAT GREASE that you should not put in your compost. There are all kinds of soap recipes on the internet. I've tried a few. The thing I object to in these NEW recipes is the cost and waste. Those fancy oils are EXPENSIVE. Cheaper to buy commercial soap and be done with it. Hope this explains my purpose in posting this topic: ***Recycling old meat grease rather than throwing it into the garbage that will go into land fills*** We can greatly reduce the amount of trash and garbage that goes into land fills (millions of tons of garbage dumped on the land and in the ocean )just in America) just by practicing the three "R's" of waste management for good conservation - REDUCE -> REUSE -> RECYCLE -> Don't waste food! Use those leftovers and compost your kitchen garbage. Many household items that most Americans tend to just toss in the garbage daily can be REDUCED, REUSED, and RECYCLED, including clothing, buttons, zippers, snaps, hook and eyes, and other items just in our households alone. Good conservation practices not only saves the Earth by preventing pollution and conserves our natural resources, but it will save each of us MONEY, not only collectively as a society, but in each household! FOAS, I've never halved the recipe, but I bet it would still be great, obviously baked in a smaller dish & deducting a little baking time so it doesn't dry out. When it's bubbly and just slightly brown on top, it's done. My DS & his fiancee are arriving from Denmark on Friday to spend a week w/ us. Lobster is at the top of his list of "must have" foods while he's here. Don't think the $3.99 price will hold, but hope it stays low for just a while longer. For all the folks in other regions who don't get reasonable prices/access to fresh lobster, I can relate. Whenever I read a post that asks, "What can I do with all these mangoes, cherries...or lemons from my tree... ?" I am equally envious. We've all got something special!

Dragonfly, my co-workers loved them. I'm surprised they made it in. I'm so clumsy that I'm shocked I didn't drop them. I was on the way into the timeshare office I work in and I was stopped by three housekeepers who begged to see what I had in the carrier. They started reaching for a biscuit and then remembered to say, "Cud we tra won?" Well of course I couldn't say no. They along with my co-workers said that the biscuits tasted just like the ones at Red Lobster and they were grateful for me bringing them. I gave the recipe (with a bit of hesitation, I didn't want them to know how easy they were to make, I wanted them to think I slaved for them!) to 4 people. Thanks again Dragonfly... this really must be the best forum on the net!

You can get cold water lobsters any time of year but they are most plentiful (and I think cheapest) in the summer months. Scallops are in season through the winter months-- December until March/April if I remember correctly. We always have scallops for Christmas because they are so fresh and so good then! I would strongly recommend getting fresh/live lobster in order to make your lobster rolls. You can generally get frozen lobster tail anywhere but it's just not going to taste as good as you are remembering! I frequently buy precooked crab meat but I just wouldn't do it with lobster. If I opt to go with presteamed crab and shrimp, it will have been done that day-- the crabs will be fresh. We have plenty of local businesses that will gladly do both. What they won't do is clean the steamed crabs as my dad and grandfather used to do for us when we were growing up. They'd get bushels of crabs, steam then and clean them all out before serving them on the picnic tables. I was an adult before I knew that you have to clean your own crabs!

I agree with tricia, I'd just eat it with some melted butter.

Barring that, it might make a nice sauce for pasta, if you like that type of dish, or Lobster Newberg wrapped in fresh crepes. A bit less "fancy" (and fattening) would be a lobster bisque or even a lobster roll, basically "lobster salad" on a bun.

From the Mac 'n Cheese thread...

I'm another who believes Vermont Cabot white sharp cheddar is the best for mac 'n cheese. We love the tang much better than CB. I'm on Cabot's email list & I got a coupon for $2 off their Special Reserve Cheddar a couple weeks ago. I'm saving the coupon for Xmas as a special treat to serve with either melted Brie or apple pie.

Linda, it's hard to find orange cheddar in New England. My store doesn't stock it.

Lobster in garlic butter over pasta.

I would melt a mess of butter, add a tiny bit of minced garlic (or shallot), a squeeze of lemon and reheat the meat in that. Optional is a bit of white ine too - but I usually skip it. Once it is heated, put it over linguini (or other long pasta) and sprinkle with a bit of parsley.

Warm it in a frypan with a bit of butter...add a little lemon and eat....forget the pasta!

Sorry, but yours is a dilemna I've never had to face (see thread on $3.00 lobster).

However, I'm reminded of the youthful reminiscences of a friend (now middle-aged) who grew up in New Hampshire. He said that in his school days, you could tell the rich kids from the poor kids by the contents of their lunch kits. The rich kids ate peanut butter sandwiches, while the poor kids, often the offspring of fisher-folk, had to settle for lobster sandwiches.

We ended up eating half with melted butter and lemon and the other half mixed with Ann T's marvelous Remoulade sauce and served in the halved avocados.
