What's wrong with my thighs?

Nooo, not those thighs!

I made a braised Chicken Provencal over the weekend from the Cook's Illustrated Cover and Bake book. They say that after 1:15 the thighs should be very tender. In fact, they seem a but stringy and not ultra tender to me. (The dish went into the freezer for a dinner next week.)

I am wondering about what to do when I reheat the dish. Should cook them longer to tenderize them or would more cooking just make them worse?

I usually roast chicken thighs and they come out very moist and wonderful. For braises, I most often do beef or lamb. Is chicken just not a good candidate for braising? Btw, these are Bell & Evans thighs...best brand I can get around here.
