Dressing question.

Next question--I want to make dressing to go with my roasted turkey breast. I always make dressing by stuffing it into a whole bird, but with the breast I don't really know what to do. Any time I have had extra dressing and cooked it in a separate dish, it is never as good as the stuffed dressing. How do I make really good dressing outside the bird? My son (a gourmet cook) arranges the dressing around the bird but that way he has no drippings for making gravy. I want my gravy and moist stuffing too!

Add some melted butter & stock to your dressing to make up for the loss of the turkey drippings. When baking the dressing, keep the pan covered until the last 15-20 minutes to prevent the dressing from drying out.

yep what Tricia says..my mom always did a casserole in addition to the "stuffing" she'd make the whole batch..stuff the bird and pop in the oven...extra became dressing and rested in it's lidded glass casserole in the fridge until it's turn in the oven...before putting in the oven she'd pour a generous swirl of chicken broth over it, relid and bake...remove lid to crisp up the top in the last 10-15minutes.

Compost, by definition, is not sterilized. It is just the opposite. It has bazillions of bacteria, fungi, protozoa, and micro-arthropods to replenish any you might have lost due to soil sterilization, poisoning, disease, or other tragedies. If you do something like steam sterilize compost, you may as well have bought cheap peat moss. I disagree with using any topdressing when seeding. The worst thing that can happen is you bury the seeds that are supposed to be on the surface. Then they won't germinate. The best thing that can happen is the compost helps to hold more moisture against the seed for longer so the seed germinates. Whether you use compost or not, you should still roll the seed down with a roller. Once you opt for the roller, then the topdressing is superfluous. Only use real topsoil if you already have a drainage problem you need to correct. Why? Because topsoil is definitely going to change your drainage. Back to your specific compost, I wonder why they would need to screen a compost made from the ingredients mentioned. Nothing in that mix is larger than 5/8 inch to begin with - at least not after 18 months. Maybe they have wood chips in with the saw dust. That sounds like reasonable compost. The more original feed stuffs you can get the better. For example it would be better compost if they had restaurant scraps, food manufacturer waste, grass clippings, tree trimmings, brewery waste, etc.

Well, I'll tell you what. One of my best garden years was when I got a 5 gal bucket of rabbit poop/urine/bedding about once a month. I had bags of leaves from the neighbors, and UCGs from the store I wasworking at!! I had a steaming HOT couple of piles that year without doing much work! Just forked everything on each bed and tilled it in! This year my compost bin is sitting on the bed that will not be planted for the winter. Hopefully, I'll have enough compost to just rake it out in the spring! Then I'll do it again next year on another bed! I found out a neighbor raises rabbits and am going to talk to her about getting a bucket every once in awhile! In the past, I've put straight bunny poo straight in the garden and have never been sick! Maybe good luck? I don't know! Happy Gardening! Nancy

annie, you are right about the meger selection in the department stores at the moment. I saw that when I went to buy my 9 year old grandson a few new garments, at Kohls. I swear that there were no more than about six racks or shelves of anything, at all in that section. And, most of it was the same old, same old stuff on every one of them. All of it was awful synthetic stuff. I walked out empty handed and havent been back to Kohls since. The womens clohtes were just as limited and just as awful. Online purchasing is becoming more necessary when the stores are declining so very much. With online ordering you never know what it feels like, or where any element is going to rest on your figure. I simply cannot do it or be bothered with all of that shipping back and forth. So glad that I can sew, although about the only thing that I can find to sew with anymore is linen that I do order online. The quality of this vendor is consistent and reliable and there are no fitting issues involved with the ordering. I am convinced that many of these fashion photos are altered to make the models legs look so absurdly long! I have seen some that are so exaggerated that it is almost laughable. Shopping for just about anything has become a chore.

Or....

Put a rack over your stuffing, to roast uncovered.

On the rack put a couple of turkey legs.

As the legs heat up, they drip right into your stuffing, giving it at least some of the flavor that you want.

I was going to suggest laying a couple of turkey wings directly on top of the pan of stuffing....no rack.
I have done something similar using chicken wings....but I think turkey would be better.
What you are looking for is the turkey juice and fat to seep down into the stuffing....remember..in certain circumstances....grease is good!!!

I don't know how much you're going to get in terms of drippings from a breast in any case...White meat being not fatty.

If I were you, wanting both gravy and tasty stuffing, I would pick up some turkey wings/tails and make some strong stock with which you can both moisten the stuffing and make gravy.
