Questions-Pizza Dough

When is the preferred time to split a large dough ball into 2

smaller portions? I split after kneading and before the 1st rise-I let them rise in individual bowls. We like thin, crusty crusts, so I don't know what effect, if any, this has on the final crusts.

I want to buy the KA dough doubler - so I guess I need to buy 2 of them, if I continue to split and rise separately.

Well, I didn't know there was such a thing as a dough-doubler!

I've been using the rectangular plastic ice cream bucket with the lid snapped on tight. It works great for me.

Really makes no difference....I usually split just before I roll it out. I plop the dough on my board, split it, pat each half out, cover it and let it rest about 10 to 15 minutes....then proceed to roll it out.
No need to buy 2 dough buckets...unless you want 2.

If you have a lot, I'd cook it: Last year I froze some bread dough, intending to take it out and bake it as needed. Me being lazy and forgetful, it sat in the freezer a little too long, so I composted four uncooked loaves. First, it started to ferment which had a nasty smell. I guess the alcohol it was producing slowed the composting process, it wasn't breaking down as fast as cooked bread scraps in the same pile. Then it turned to a goo that was sticky, smelly, and messy when I turned the pile. In about three weeks, the problem was gone. Other than that, it composted just fine so I don't think it's a big deal, but I'm imagining you have a lot and it could get bad. I figure the ovens are always on in a pizza joint, so you really aren't wasting energy by cooking since they would be sitting there hot and idle anyway. Bread is a green, so I think dough would be too. Just my $.02.

4 1/2 cups of flour to 1 3/4 cups of water might be just a little soft...but not much. When I make pizza dough, I measure the water, add the yeast, add some flour, add the salt...stir and slowly add more flour until it's the right consistancy. Start with the recipe as printed and add a little more flour if it's too sticky. But I really think it won't take more than a couple of tablespoons. Linda C

If you are into sourdough, this is a simple recipe (for more information, see link below). I use an old-fashioned form of starter called "Everlasting Yeast", but it works essentially like other starters. I make an overnight sponge and in the morning I mix: 1-1/2 c. starter 1 T. oil 1 t. salt 1-1/2 c. freshly-milled whole wheat flour If I'm going to use it immediately, I knead the dough for a few minutes, then let it rest (covered) for 1/2 an hour, form and pre-bake the crusts. If I use it in the evening, I toss the dough in a plastic bag and retard the dough in the refrigerator all day. Take it out about an hour before I need to form the pie/s. You can bake this panned, or on a stone - your choice. I'm with rhome410 - there's nothing like using freshly-milled flour. I think commercial whole wheat flour tastes like "old dirt" (she mentioned "sawdust") compared to freshly-milled. Most of the commercial whole wheat flour products (with a few exceptions) are nothing more than white flour with some of the bran raked back into it. By law, in many places, the wheat germ has to be removed from whole wheat flour so that it has a longer shelf life because the germ oil goes rancid very rapidly. Only by milling your own grain will you ever experience the best of the nutrition and fiber available in the wheat. Once wheat is milled, the nutrition quickly begins to degrade, the germ oil quickly goes rancid, and you'll NEVER experience anything like freshly-milled flour if you use commercially milled whole wheat flour. I also like Montana Wheat Prairie Gold Wheat (Hard Spring White Wheat). I've been able to get it at Wal-Mart recently, $5 for 25-pounds (regularly $11), so I've stocked up hundreds of pounds (I also mill many other grains/seeds/beans - not just wheat). Wheat keeps well for very long periods of time. You can get approximately 90 one-pound loaves of whole wheat bread from a bushel (60-pounds) of wheat (source: Kansas Wheat Commission). I've been reading these and all of trailrunner's post. They are just great. All the hints were great. I bake bread out of boredom, I rarely use a recipe, for better or worse and like the wet doughs as well as quicker higher yeast doughs for pizza. Someday I'll get that "super peel" with the cloth belt thingy. I am forced to pre-cook my thin pizza crusts without one- My favorite bread is an olive bread that is made locally in the East Bay and sold now only at the local Berkeley farmer's market- you can go to their bakery, and they will sell stuff to you, but it's not a store front, no sales help, no hours- if they are there they'll sell it to you- they're also fresh pasta makers- 'Phoenix Pastificio'- if you're ever in the area. I've never tried to make that bread, it's almost Holy to me...( although I know he uses a biga and those black Kalamata olives). It has a thin almost black burnt crust, with large ciabatta holes to the crumb and flavor to die for.

Thanks - I'll buy only 1 and change by sequence - less clean up as well. I have no idea why I split 1st - one of those method mysteries with no reason behind it :).

I prefer a plain stainless bowl that I mixed the dough in covered by a plastic shower cap....;o)

And I split the dough after it rises, make a pizza with one half, freeze the other half.

Teresa-I was afraid to use stainless, that it would be too cold and a shower cap-perfect! I have both. (Remember I said I wanted to ask you a baking question at Camp Cheerio? This was my question :)

I use my ancient beloved large yellow tupperware bowl. Since I only make one large pizza at a time, I mix and knead the dough in it, add a tiny drizzle of oil, roll the dough ball around in the oil, then snap the lid on and let it rise.
On the occasion that I make two(when GKs visit), I have another big yellow bowl in which I make a second batch of dough. I have trouble kneading large amounts due to arthritis and carpal tunnel, so using a bowl for each makes it easier for me.

I do the same as Teresa.

Most times, I mix the Dough and plop it into a SS bowl.

Cover it with a damp towel and put it into the oven that was heated for a minute, turned off.
Place a pan of hot water on the bottom shelf.

When doubled,( about a half hour ) knead it again, cut to Pizza sizes and place in an oiled pan.

Let it rest but keep streching it out to the edge,m every few minutes and up the sides for the crust.

I let it rise slightly and prebake the Dough a little, till firm and freeze it or make a Pizza,
with the just baked Dough.

In the Pizzeria,I had a Proof Cabinet with a Hotplate and water, for humidity.It held 100 Pans.

Thanks for all the advice. You saved me money. I made pizza for dinner last night. I let it rise in an oiled stainless bowl covered with a new hotel give away shower cap :). I preheated the oven slightly - for a minute (it is cold and drafty here)before I put it in to rise. I split it right before I rolled and spread the crust. Thanks again.

You forgot the pan of hot water in the oven ?

It helps keep the oven warm and adds Humidity.

One suggestion, when you use the oven, turn on the light. Some have claimed the light alone gives enough heat to help maintain the heat in there. Haven't tested with a thermometer and it could be a hoax but it wouldn't hurt. Plus be easier to see if it's rising too.

I did forget the water! And I wanted to try it - low humidity here this time of year. Next time.
I had trouble heating the oven - my fancy Dacor Oven That I Hate - is not the easiest to turn on for only 1 minute. And the oven light does not work! That's why I bought a Breville Smart Oven - toaster oven. I need to see if it will all fit in there. I cook the pizzas in the Breville to perfection.
We had the leftover pizza and spicy black bean soup after the football game last night - and DH said - this crust is perfect! Yay! Even reheated.

If you like a Crispy crust and not soggy,
try prebaking it a little , before you put the sauce on top.

Then bake with the Sauce a few minutres, before you put on all the toppings.

Put the Cheese on, in the last few minutes, so it does not burn.

If anyone is interested in a Proof Box,

it can be made easily, using an unwanted under Counter
Refrigerator, or fullsize.

Take out all the refrigeration unit, cut a hole thru the top and fit in a plastic cup, with the bottom cut off, for ventilation.

I used a hot plate with a pot of water, for heat and Humidity.

If you make Pizza in a pan. Put in some racks.
