Question about potatoes

I will be making cheesy hash brown casserole for Christmas brunch. I would like to use my own red potatoes and shred them myself instead of using frozen hash browns. Do you think it will work or will they turn to mush? I have never tried it before and I don't want it to flop.

They will be wonderful....after you shred them, drop into cold water.....swish them around and drain to get rid of the excess starch.

Thanks, everyone for all the thoughts and links. When I saw "grow in straw," I do mean their roots are in soil, but instead of hilling with soil, you hill with straw. I know many people feel towers don't work, but I had wonderful results last year from a grow bag - and the principle is similar. Can anyone tell me why it would be better than a wood tower? I don't expect 100 lbs. of potatoes from a tower (I think that's ridiculous), but I also don't have room to grow potatoes traditionally. I've read (I wish I remembered where) that when the potato plant "bumps into" a hard surface (like the sides of a grow bag or the wood from a tower), it branches out, creating more chance for potatoes to grow. Also, in my research I found that many failures were due to using early variety potato...and many others didn't mention what type of potato they used. My thought was to continue with the grow bags, but to try a tower, too. But getting back to my original question: Is there any good reason not to use straw for hilling? (It's just as easy, in my experience, to break stems with soil as it is with hay.)

Given you are in zone 9, you could do it, but will likely have some issues with soil fertility. Sweet potatoes do not like high levels of nitrogen in the soil. DarJones

Thanks for the replies. Yes, 25 by 35 is pretty big so I might put other things in there too. I plan to make another bore hole and lay out the sand in a profile. Maybe that will give me an idea where groundwater moisture starts coming up. I will add organic material and lots of it. I have duff from the forest and peat/muck from an old lakebed. From the link posted I found a companion volume that has a chapter on potatoes. (Link below) These are nice easy-to-understand books. From the book I found the following: "Potatoes have a more superficial root system than many crops such as corn, winter wheat, sugar beets, and most legumes. In its early growth, it is almost entirely confined to 8 inches of surface soil. After extending horizontally to a distance of 1 to 2 feet or more, the roots turn more or less abruptly downward and penetrate the second and third foot of soil. Newbie question about potatoes

I'm not sure when to plant potatoes here either, I live in Central FL and I think I'm going to try to plant mine in a week or so. I haven't found any guides that tell when to plant potatoes here other than sweet potatoes. I got my "seed" by going to a local healthfood store and buying a couple potatoes. They aren't supposed to be sprayed with any growth retardant, and in fact were starting to sprout. It's definitely experimental!

Karen, I never use frozen hash browns, only real potatoes. It'll work just fine. I usually just dice mine up instead of shredding because we like the texture better with the chunks of potatoes, but either will work.

I've wondered about this, too, so I'm glad you asked, Karen. Next question--are we talking about using raw potatoes of cubing/ shredding already cooked potatoes?

Raw potatoes....but you need to rinse them. When I do a mess of latkes, I grate the potatoes, dump them into a big bowl of cold water and then scoop them out as I need them into a strainer and press......after there have been about 3 pounds of potatoes rinsed in that bowl of water there is a couple of table spoons of potato starch in the bottom.

Thanks, Lindac. That's kinda' what I figured but wasn't sure. Reason I was a little confused is because I generally make 'hash browns' from leftover baked potatoes or boiled baby reds.

OT, but I also use grated leftover potatoes (baked or boiled w/ jackets on) stirred into pancake batter to make potato pancakes. (That's what worked when I was trying to duplicate my favorite potato pancakes from a local restaurant.)

Just to spin this a little, I also freeze cooked potatoes ci lantro. Sometimes I'll prebake a 5 lb. bag, and go from there. They will also last in the fridge for a few days for frying (we make hashbrowns this way all the time) if you don't want to bother with freezing, but would like to pre-bake your potatoes for your casserole. Either way is good!
