They will be wonderful....after you shred them, drop into cold water.....swish them around and drain to get rid of the excess starch.

Karen, I never use frozen hash browns, only real potatoes. It'll work just fine. I usually just dice mine up instead of shredding because we like the texture better with the chunks of potatoes, but either will work.

I've wondered about this, too, so I'm glad you asked, Karen. Next question--are we talking about using raw potatoes of cubing/ shredding already cooked potatoes?

Raw potatoes....but you need to rinse them. When I do a mess of latkes, I grate the potatoes, dump them into a big bowl of cold water and then scoop them out as I need them into a strainer and press......after there have been about 3 pounds of potatoes rinsed in that bowl of water there is a couple of table spoons of potato starch in the bottom.

Thanks, Lindac. That's kinda' what I figured but wasn't sure. Reason I was a little confused is because I generally make 'hash browns' from leftover baked potatoes or boiled baby reds.

OT, but I also use grated leftover potatoes (baked or boiled w/ jackets on) stirred into pancake batter to make potato pancakes. (That's what worked when I was trying to duplicate my favorite potato pancakes from a local restaurant.)

Just to spin this a little, I also freeze cooked potatoes ci lantro. Sometimes I'll prebake a 5 lb. bag, and go from there. They will also last in the fridge for a few days for frying (we make hashbrowns this way all the time) if you don't want to bother with freezing, but would like to pre-bake your potatoes for your casserole. Either way is good!
