Tex Mex and almonds

We're going to a Christmas party tomorrow and little man wants to make sugar spiced almonds for the kids. The recipe calls for Cayenne pepper and red pepper flakes. I am out of Cayenne pepper and I don't want to run to the store for just one thing. I have a large jar of Tex Mex that I bought a few months ago. Have never tried Tex Mex... will it go well with almonds? Al

I have never used TexMex, but I have made almonds with Old Bay seasoning (crab boil spice). It is quite tasty. I suspect TexMex would be just as delicious. Not sure what your recipe is, so here is mine for comparison:

Chesapeake Bay Spiced Nuts
2 tbsps butter, melted
2 tsps Old Bay Spice
1/4 to 1/2 tsp hot sauce
2 c pecan halves or whole almonds
2 tbsps Worcestershire sauce
1/2 tsp garlic powder

1. Stir together melted butter, & hot sauce; add pecans or almonds, Worcestershire sauce, Old Bay Spice and garlic powder, tossing to coat.
2. Place nuts in an aluminum foil wrap-lined 15- x 10-inch jellyroll pan.
3. Bake seasoned nuts at 300Â° for 30 mins, stirring twice.
4. Cool. Store in an airtight container.
5. Enjoy

Cindy, thanks! The recipe looks good but I don't have any Old Bay Spice. In fact, I don't even know what it is. Can I mix the spice at home? Al

Wow. That platter! Wow. Fabulous. I really like Rick Bayless' books, every recipe of his that I've tried has been consistently yummy. And I think that the tupperware containers are great! Ever since I've done battle with Rubbermaid about some melted lids (it seems that one set of their microwave safe containers have lids that aren't microwave safe) I've been on the look out for "reliable" storage. I'm still struggling with that bone graft in my jaw and so everything that I can't chew (like steak) looks especially delicious. We've been eating, I had chicken and dumplings a couple of nights ago and Makayla has been spending the week with me because I've been driving her to ballet camp at the Grand Rapids Ballet. Her final class was Friday, so we're at Elery's now. She watched America's Test Kitchen and promptly announced that she would make Chicken Cordon Bleu. Fine with me. So, Black Forest ham slices wrapped around grated swiss and stuffed into a slit chicken breast, then breaded with a mixture of bread crumbs, butter and Ritz crackers. Very god, with mashed potatoes and green beans. I cut chicken into tiny little bites and managed to chew enough to make her happy, LOL. I forgot my camera, though..... Annie

Old bay has a large amount of celery in it....
what is in the Tex mex...if it doesn't contain cumin and oregano it will work just fine.

Tex Mex ingredients: Spice (including red pepper), dehydrated vegetables (onion, garlic, green & red pepper, parsley, Jalapeno pepper), salt, yeast extract, fructose, hydrogenated soy & cottonseed oil, calcium silicate. So no cumin and oregano.

By the way, why cumin and oregano won't go with almonds? Just curious.

Got this from a Google search...Old Bay ingredients..celery salt , mustard, red pepper, black pepper, bay leaves, cloves, all spice, pimento, ginger, mace, cardamom, cinnamon, and paprika...

There are also some recipes on the web to make your own, so if you have these ingredients, might want to check it out.

Thanks Cindy! I have a tray of almonds baking in the oven right now. I ended up using Tex Mex to sub for Cayenne pepper, just one tablespoon so I hope it won't make too big a difference. If it doesn't turn out as good as I expected I will try one with the Old Bay spice mix. Thanks again! Al
