canfan - I have a GF baking business so there sit a lot of extracts (nothing artificial) that I buy in bulk, and I make about 50 varieties of fruit jam so I'm always looking for a new flavor combo. I noticed that most of the extracts use alcohol, not the problem, but a lot have glycerin in them too, which is the unknown for me as far as using it in canning. BTW pure almond extract is usually just almond oil and alcohol. Nancy

I've made Sarsaparilla tea that tasted like root beer but never made root beer. Like Bumblebeez, I tend to use liqueurs rather than extracts, and my favorites are Frangelico, Amaretto, Cointreau, Godiva Chocolate liqueur, and several versions of Kahlua, including Mocha (my favorite) and hazelnut. I really like Mocha Kahlua on ice cream but am almost out and am having trouble finding it again. I think they may make it only at Christmas and New Year's. The liqueurs are not as strong as extracts and work in a lot of drinks as well as recipes. I use them a lot with ice cream but also in other creme anglaise recipes such as Bavarian Cream. For extracts, I only have vanilla (Cook's brand, which is okay) and almond (brand unknown). I seldom use the almond extract since I generally substitute Amaretto instead. I've noticed that Indian markets sell a lot of extracts, but I have not used many of them yet, including several that I have in my pantry. Lars

LOL, now this is an interesting discussion. I won't add an opinion because I don't like any of them, but I'm thinking I might be able to choke it down if it were mixed with coffee, cream, almond, vanilla and chocolate! I know, the Irish side of my family would be disappointed in me. (grin) My Great-great-great-great Grandmother, Bridget Murphy, would have approved of the Jameson's, I have a feeling. My Native American Great Grandmother would have said that we should stay away from it all! Annie

and another use for the bourbon.. I love this for basting grilled chicken.. BOURBON BUTTER 6 ounces butter, cut into small pieces 1/4 cup brown sugar 2 tablespoons bourbon 1/2 lemon, juiced 1 teaspoon kosher salt 1/2 teaspoon freshly ground pepper While grill is heating, make bourbon butter glaze by melting butter with the other ingredients in a saucepan and boiling over high heat for 2 minutes, stirring constantly.
