Just freeze them....they will be prettier if you freeze them in water....but after being cooked for a bit....who's to know?

Lindac, so they don't turn to slime when they thaw? I thought they'd ruin? I'd love to freeze extra green onions for cooking with so I don't waste food!

You can also dehydrate green onions for use in salad dressings & sprinkles, dips, soups etc. I generally keep a jar of dried around for times when I suddenly realize I used my last green onion yesterday!

Yes....they "slime"....but they also slime in water...once the water turned to ice is turned back into water....

Freezing Green Onions:

This is one vegetable that doesn't require blanching before freezing, and the same instructions apply to regular onions.

1. Make sure the onions are COMPLETELY dry.

2. Chop. Blot any moisture with paper towels after chopping.

3. I like to quick-freeze them in a single layer on a parchment-lined baking sheet - a small one designed for my toaster oven - and slide it into a zip-lock bag to keep the onion smell out of the freezer.

4. When completely frozen (10-15-minutes), lift the parchment paper and funnel the chopped green onions into a container with an air-tight lid. Make sure the container is something you don't mind smelling like onion (recycled juice or water bottle with a screw-top lid works well). If using a zip-lock bag for storage, you may want to double-bag them.

I also dehydrate them, but I make sure the dehydrator is placed out in the garage!!!

You can also take the cut-off root end and place it in soil (root-side down) and grow another green onion. This time of the year, you'd better have a nice sunny south window for that project.

Thanks, everyone. I stuck some in a ziploc bag on the advice of a friend. She is also of the mind that if you're going to cook with them, don't worry about them being slimy.

I will also try to dry some in the dehydrator next time around.

I didn't know they would grow in water either, so I'm pretty psyched. I was only paying 2/$1 for bunches, but if I can get them free, why not? I did notice the greens are a little pale as they get longer, so I may try putting a drop of liquid fertilizer in them to see if it helps. I have seen people grow them in pots on the windowsill, but I didn't know they would grow in water either!

Dirtygardener, I picked up a bunch of green onions today for 49cents. The main reason for getting them was so I could try growing them!

I want to make sure I do it right. Do you cut off the dark green leaves and just put *them* in water? Won't they just hang over the edge of the glass and get all limp? They actually grow roots, from the green leaves?

OR is it the actual white onion itself that you dropped in water?

I need clarity!! LOL

I've not done it....but I am sure you need to put the whole onion with the root end into the water to have it grow.

Some on this forum told me that you could put them in water and get more green onion tops. I tried it and it didn't work for me.

Jasdip, you need to cut off some or most of the green tops. The white bulb is where the roots are and will develop again. If you want you can leave most of the green on and clip it away as they start to wilt, but I think it works better to cut back before you 'plant'. Also, you don't want to drown them. I think that's one of the ways most people lose them. It might be harder to keep track of but if you put them in a glass and just cover the bottoms you'll do much better. Do change the water regularly. I have well water, but if you have chlorinated water, keep a glass of it that's allowed to set out for at least a day and use that to keep watering with. Good luck.

I read it here, about using the whites to grow new greens. Green onions are very expensive here. So I did it with the last bunch, stick them into a pot with soil after I cut off all the greens and these darn things started growing the same day. I just started it, so I do not know how long it will last, but even if I get one extra bunch out of it, it still cuts my cost to half :) Plus I will cut only as much as I need, so that should make it go father as well. No waist.

I know that outside the US, green onions can be expensive, but here in FL, I never pay more than 50 cents for a bunch of 6-8. As far as I'm concerned, growing them isn't worth the effort, but I do understand this issue.

try this : cut the green top off, save about 4 inches of the bottom measure from above the roots, do not cut the roots off yet, place the 4 inch stalks on a paper towel for ,3-4 days to dry out the roots a little. get a pot of damp not wet soil 6-8 inch pot is good for about 6 stalks. after 3-4 days trim the long shriveled roots to about 1 inch,poke a hole and place one stalk in each hole and press soil around the stalk place near a bright window keep soil a little damp, in a less than a week you should see the top of the stalks start to raise up and grow,i normally can cut green leaves about a month later. i have used this method since i was a child (i am 65 yrs old)my mother did too.the only time i purchase green onions is if i use up all from my garden.another tip to try: after you cut your green tops off wrap the green tops in a dry, yes dry paper towel then a sheet of dry newspaper and store in refrigerator,no plastic, this method cuts down on slime and the green tops last a little longer,

i forgot, stick each stalk of green onion about 1 1/2 to 2 inches under the soil.
