I thought it would be better to start a new thread.
I try to find Hengstenberg brand sauerkraut. World Market/Cost Plus usually carries it here. It doesn't matter what brand, always taste it right out of the jar, bag or can. If it tastes to harsh (sour) I rinse it briefly under running water.
This is not an exact recipe everything is to taste.
You will need
onion
lard or oil (lard tastes better)
sauerkraut
apple
bay leaves
juniper berries
cloves or caraway seeds
a little sugar and/or apple juice
Heat the lard and sautee chopped onion until softened. Add sauerkraut, roughly chopped apple, a couple bay leaves, a few juniper berries and either 2 to 3 gloves or some caraway seeds. Cook the kraut over medium high heat until it starts to stick a little bit to the bottom of the pot and a few brown bits develop. Turn heat down to a low simmer. Taste the kraut and add a little sugar and/or apple juice. Depending on how sour the kraut is and what you like. Cover and let simmer for at least 30 minutes, stirring occasionally.
Serve with brats and boiled potatoes (that's how my mother served it)
