Slice them up and freeze them. You can use them in spagetti sauce and other recipes that call for chopped peppers. I usually buy that chopped 3 pepper mix, frozen at Trader Joes and I always have peppers on hand.
I don't know if they are green ones just ripe....I think that they all have a different taste (sweeter). The red and yellow ones are not as strong tasting as the green ones.
Good price for them though! Sometimes I find the fresh ones at the 99 cent store (3 in a pack) and I just chop them up and freeze. Stuffed peppers sound yummy!

Kath, just go ahead and make all 4 into stuffed peppers, and I'll be right over. lol I use all three colors for them and like them all.

If you have an Aldi near you, check them out. Worth the trip just for peppers from what I've seen. Last time I checked there the 3 pack, a red, yellow and green were about $1.50. My cousin talked like they were about that price when he was there the other day. Last trip to Target when I bought one, I paid 89â for a green pepper and when I was there the other day they were $1.49 each. I don't pay that much for them. I'll buy frozen at that price. I now chop them up and freeze them myself, as I do onions and celery. Have them on hand and very little waste. Plus I can buy when they're a price I'll pay.

make a batch of stuffed ones and freeze the ones you do not eat. I buy the frozen Stoufers ones to have for lunch often and they are very good.

I picked up some nice ones at Kroger tonight too just to make stuffed bell peppers I love them.

Well I made two, one for me and one for Alex. I think I'll make omeletes with one of them Tuesday, when I'm off. I may freeze the other one.

I miss Kroger. We don't have them in this area - near Philly. But I grew up in Pittsburgh and that's where we always shopped. I think everyone in my family worked there part time during school.

Well they're not in Pittsburgh either.

I dehydrated a bunch of bell peppers last summer when they were on sale for $1. They are good in soups. I use the fresh ones in a lot og foods. They are great in stir-fry and just about any place you use onions and yellow squash.

Boy, I'm living in the wrong area!!! I love green (red, yellow) peppers. Mostly to slice and eat raw, but lately they were over $2. each. Yesterday they were $1.89 and were so small and gnarly. When i last bought them at a decent price, I diced them up and froze them. That way I can sneak them into casseroles and Hubs doesn't seem to notice.

We love coloured peppers in the house, raw, and in stuffed pepper dishes and other dishes. We always have them in the house. I like stuffed peppers with the sweet, coloured peppers better than the green ones.

Sliced into wedges, eat hummus with them. Or egg salad, instead of bread.

Cut them into chunks and then broiled, with onion and tomatoes and mushrooms, as a side for dinner.

We get them at Aldi's all the time and our local grocery usually has the red ones for $1 or so, so we eat a lot of them. I don't really like the green ones, so this works out well for us. Last pack from Aldi's had 2 reds and a yellow in it!

I always cut mine up with onions and freeze in baggies - about 2 cup portions.
I love having peppers and onions ready to throw in whatever I am cooking.

I saute red bells with garlic and green onion, then eat either with rice, or pasta, depending on my mood and what I have in the house.

You can also toss some cut up chicken in, while sauteing. :)
