The Nesco....she has arrived....WOOT!

It was close to 6 PM, but my intrepid UPS driver made it anyway...I had turned on the porch light for him!

I've read through the book and will do the BIG burn on Friday when I'm home with the day off. Think I will get a pot roast for the weekend and maybe try the deep dish pizza, too. This is the perfect size for me!

Does anyone know a good simmer temp? 250F would be boiling, right? So 225F or even 200F?

New toys are such fun!

Teresa, the boiling point of water is 212ÃÂ°F. I think if you want a simmering point it would be about 205 to 209ÃÂ°F.

Deb, You made the right decision in ordering from Hallson. Even though I only had my first oder from them ~ 2 weeks ago. I am already a happy customer. I ordered one Blue Hawaii. I wanted a vase shaped hosta and already have Krossa Regal. It was on sale for $10 (ended Aug 29). I received the shipment 4 days later. Nicely packed and large healthy plant. And I was nicely surprised with a bonus, a healthy and large 2 eyed First Frost! Unfortunately I did not take pictures before planting them. But here is a picure with them in the ground. I've been using a portable oven for years (holidays, parties anytime I need an extra oven). Mine is a Nesco brand but I noticed over the weekend at Walmart that they're selling an off-brand for only $29.00. Our local grocery store has a feast you can order, too, if you don't want to cook. You just have to let them know how many people it's for and when you're going to pick it up. Don't let your broken oven get you down! In the end I'm sure you'll have a great holiday.

I have an old Nesco Roaster I bought at a garage sale. It has the enamel porcelain and the inside is 11x15 inches. I think I could get a turkey in it. Do I have a 12 qt or an 18 qt? It doesn't say. Stamped on the bottom it says it was made in Granite City, Ill, and on the side is stamped the number 41E04044. The cord is rubber not braided. Any idea when it might have been made? It's white with a stainless top, bakelite handles, black porcelain, has a rack with sides you can lift and a little extra square tall pan with a lid for side vegetables, so I was told. Has the logo Nesco in script over a dial with numbers up to 400. I measured and I think I can even get my cast iron pan in there to bake cornbread. That's what I wanted it for, to bake. My regular oven is so big, why waste all that heat on that big space for a couple loaf pans. Can I use a silicone muffin pan in the Nesco or will it melt on the rack? Oh and I have seen people put water in the heatwell, under the cookwell, I was told it made for more even heating and to prevent damage to the enamel. But you don't want to do that, do you? If the water got through the heatwell seams it would get into the electrics.

LOL Nancy, I'm sure those puppies just can't wait for holidays! They'll probably leave hints about Thanksgiving is year round and Christmas in July! Doing gravy in an electric roaster is kind of a personal preference. I think you'd be better off to take the cookwell and put on the stove. A lot depends on the roaster. Nesco does NOT heat from the bottom. They call it the "circle of heat" since it's in all the sides of the unit which helps keep things from burning on the bottom and the heat is more even. My mother used to make the gravy in the roaster. (I don't remember the brand but it was not Nesco) She'd crank it up full blast but as I recall hers had a heating element in the bottom. A cousin takes the cookwell and puts on the stove. Neither of her roasters are Nesco brand. I have the Roast Air attachment that fits my 6 qt. Now THAT will give you nice crispy skin! I used to just cock the top and let a lot of the moisture out and frequently take a baster and pull the juices out to help dry and crisp the skin, which did work. Now I let it cook and then about the last 1/2 hour or so I turn on the fan and even turn up the heat a bit and the convection action will crisp and brown things up. Be warned though, when the fan goes on, it will blast the juices around so you might want to pull some of them out just in case. The convection action also evaporates it more too. I never thought about the gluten issue on prebasted meats. I usually prefer to get a non-basted if I have a choice but the cheap ones usually are injected. Maybe look at organic or something? I'm not sure about that. Should ask my sister about that since she's Celiac but I know she's still confused on a lot of the things related to it.

Alexa, I got the 6 qt. model in white with the porcelain cookwell. Right now I don't have to bake many turkeys and huge hunks o' meat. I see lots of Roast Sticky Chickens in my future though. Do you think it's safe to leave this oven going for about 4-5 hours at 250F while I'm at work?

Teresa, I leave my big one going for hours at a time when I'm making stock or apple butter, it's not really much different than a crock pot. I'm perfectly comfortable leaving mine going at home while I'm at work, I come home and check on lunch hour or I go home on lunch and start it.

Well.....I was cleaning her up just now and CARP - major dent in the side of the roaster - not the cookwell! This puppy is being returned, hopefully for one not dented. I've just emailed them less than 3 hours after it was delivered.

I'm sort of surprised that they shipped the box containing the oven without another box as protection. The box is definitely busted open on one side. If it were the cooking well that was dented, I might just keep it. But I'm afraid the dent might have damaged the "circle of heat" around the wall of the bake well.

I've sent an email and tomorrow I will call also.

Bummer Teresa! Hope they replace ASAP. I cooked a sticky chicken (thanks to your reminder) in my 6qt on Tuesday. Cooked at 250 for about 4 hours. Worked perfectly! I was home quilting but had no problems with the Nesco. I would not be afraid to leave it unattended either.
I did skin the whole chicken before applying the rub and refrigerating overnight. The chicken was tender, juicy, and very non-fatty. As was the small amount of broth in the bottom of the cookwell.
Skinning a whole chicken isn't hard....just a little gross and the thing looks pitiful but I love how they cook up.

So I contacted Nesco just now and they will be sending me another cooking unit. UPS may or may not be coming by to check the damage. Now I have to wait some more.....

As far as temps go: when making stock, you want the temperature just under boiling. Having the temp at boiling will denature the proteins and cloud the stock. That's not important if you're just cooking up some broth to make a soup or a stew, but if you're trying to make a clear stock, it is important.

Actually, that's one of the advantages of the Nesco type cookers; you can have it at a lower temp than the food police allow for a crockpot.
