I have several busy errand days, so yesterday I made enough stuffed meatballs, mashed potatoes,gravy and green beans for three meals. We'll have it again tonight, then tomorrow night I'll throw in some fish filets and then have the rest of meatballs/potatoes on Tuesday. I'm not crazy about cooking anymore so when I make something that takes effort, I make enough for at least two meals.

I made some manicotti for tonight, its been a long time so it will be nice for a change.

I already posted what we're having on Harry's B'day post. I have questions for Dottie and Joann, though. Dottie, what do you stuff your meatballs with and would you share the recipe? And Joann, what do you stuff your manicotti with? I used to have a recipe that called for ricotta, spinach and?? but it's lost. I'd like your recipe also.

We had beef short ribs with roasted cauliflower and a salad. YUMMO.

Sherry--would love to hear that recipe for the soy sauce, ketchup, vinegar sauce.

Stuffed meatballs
1. First make some stuffing....either home made or Stove Top.

2. Mix lean hamburger (abt 1/2 cup hamb per meatball) mix in 1 or 2 eggs depending how many you are making. Add S & P bread crumbs, poultry seasoning and dried onion. Mix. On a piece of wax paper (or Parchment might work, although I haven't tried that, you want it sort of non-stick) Measure out 1/2 cup of meat mixture, pat into a 6-7 " circle. Put in a mound of stuffing and work the meat mixture up and around to cover. Put meatballs in a baking pan, mix Cr. of Chicken soup with some milk or chicken broth. Pour around meatballs, cover with foil and bake abt an hour. I serve with mashed potatoes, vegetable and cranberry sauce.

Hi Lynn. I usually double the sauce as hubby likes the sauce on his mashed potatoes or rice; whatever I'm serving as a side.

Sweet and Sour Sauce

1/4 cup soy sauce
1/2 cup ketchup
1/4 cup vinegar
1/4 cup brown sugar
1/4 tsp garlic powder
1/4 tsp ginger

Heat the mixture together. Brown meatball, pour sauce over and simmer until cooked and heated through.

Tonights dinner is steak on the grill, mashed potatoes and beets. We have been working all day to get the motor home settled so we can head out on Thursday for a week and a half.

Lynn, I didn't post a meatball recipe, as I'm sure you make your own anyway. Typically ground beef, egg, onion, bread crumbs, garlic powder is what I use for these meatballs.
