I have searched all over for white/gray quartzite slabs and names mean almost nothing. Try searching for Calacutta Quartzite (usually a cross-cut White Macabus), Quartzo White, or Chrystallo / Crystallo (I found some Crystallo quartzite that was the most beautiful thing I had ever seen...and then the price came back at almost $30,000 for countertops! So, I learned that the whiter the material, the more $$$$$$$ it gets, heh heh). I've also seen White Pearl that is like Sea Pearl, but less green. I ended up with Taj Mahal in a "premium" slab, which has almost none of the brown that Taj Mahal usually has, and instead is a creamy white with a hint of gray. Go figure. Don't worry about the names. Try to see the slabs in person.

What’s the pros and cons of these options?

I'd call it a greyed sage. If your furniture will be lighter, you could use that for drapes, or if you have hardwood floors you could use woven wood blinds. I'd try for a lighter or darker tone for the drapes unless you happen to find a perfect match. Or find a pettern that incorporates the color. A lot depends on the style of your home and furnishings.
