DEVILISH PORK CUTLETS

1 lb. boneless pork loin, cut into 6 equal pieces
1/2 cup all-purpose flour, seasoned with 1/2 tsp. seasoned salt
1 tsp. butter
1 tsp. vegetable oil
2 Tblsp. vinegar
3/4 cup chicken broth
1 cup sour cream
2 Tblsp. Dijon-style mustard
2 Tblsp. green peppercorns

Place each loin slice between two pieces of plastic wrap, flatten to 1/8-inch thickness. Dredge cutlets in seasoned flour.
Heat butter and oil in large skillet over medium-high heat. Brown cutlets quickly, about 2 to 3 minutes on each side. Remove from pan and keep warm.
Add vinegar and broth to skillet, bring to boil and stir until reduced to about 1/2 cup.
Lower heat, stir in sour cream and mustard and whisk until smooth. Add peppercorns, simmer and stir gently until sauce thickens slightly.

From the brasdy bunch: Pork chops 'n' applesauce. I like to fry some onions also. Pork,apple,and onion.

You don't grill on windy days? Heck I've grilled during raging snowstorms when I lived up north.

I pound them out pretty thin,sprinkle with salt,pepper,garlic powder,dredge in flour,then buttermilk then flour again and brown on both sides in just enough oil to cover the bottom of a skillet.Because they are thin they will cook through by the time they reach the right "browness".Serve with cream gravy and hot biscuits.
Orrrr......season with salt,pepper,garlic powder.In a large skillet,brown on both sides in little olive oil or vegetable oil.Remove and set aside.Deglaze the pan with 2 cups beef broth,stir in 2 Tbsp cornstarch,mixing with a whisk to keep from lumping.Return the cutlets to the pan,cover and cook on the top of the stove on med low for about 30 min.Serve on a pile of rice with the gravy over the top.

The fire danger is high right now and it's extremely windy. No, I don't grill on days like this. I would grill in the snow.

Mushroom soup works! LOL Sometimes I add mushrooms,depending who's eating and some heavy cream.Lots of variations.
I made it for my DDIL right before she had the twins.She had never eaten it before and she "requests" it at least a couple of times a month.LOL
