Swiss Roesti Lovers, Any?

One of our breakfast staples is roesti.

Usually very simple roesti. Potato, julienned on the mandolin, mixed with shredded onion, a little garlic, some swiss cheese, and olive oil, formed into pancakes and fried to medium brownness in butter on a crepe pan. I like making it with parboiled potatoes, but often use raw potatoes for laziness' sake.

Today we made one with slivered almonds and shredded turkey. As well as an experimental sweet potato roesti. Can you tell we are trying to use up the Thanksgiving groceries?

As far as I know, roesti is distinguished from latkes by the absence of any egg binder, and from potato pancake by the coarser texture of the potatoes. I'm not positive though - it may be the same dish, just in a different language.

It reminds me of teenage meanderings in the Swiss Alps, a pack on my back and a Coltrane tape in my Walkman. ''My Favorite Things'' and Swiss mountain passes go together in my memories.

Any other roesti lovers? What variations do you like? There are many - I have a whole roesti cookbook on the shelf, though we haven't gotten much past the first pages. Being written in German doesn't help.
