question about baking time

When I am asked to provide bars for a event, I like to use the alluminum pans. Do I cut down on the temp? time?? etc. Last time I made Brownies and they turned out on the dry side.

You mean those little thin disposable things?
I don't like the way they bake at all...if you really MUST, put the little thin aluminium pan inside another to bake and then remove to take.
I always cut the bars and put them on a plastic plate if I don't want to stay and take my pan home again.

I don't like the aluminum disposable pans either, for different reasons. They are just too "flimsy" and I can't manage to get them into the oven full of batter without them bending every which way.

I have been known to put one inside one of my half sheet pans to bake, but they're still hard to handle if they are very big, they need more support. I have used two together and that helps.

I do watch the baking time very closely, things seem to cook more quickly and overcook, so I start checking at about 10 minutes before the recipe would usually be done. It's usually about 5 minutes less cooking time, but I like to check early to be sure, it's sometimes inconsistent. I don't usually adjust the temperature, but it's a good idea, I might cut it down 25 degrees or so next time and see if that works better.

What year do you plan to have your wedding? The reason I ask, peonies and roses take some time to establish to bloom--sometimes several years, and would be considered a permanent planting. I would also caution you, that what bloomed in April one year, might bloom in June the next. Hopefully, someone who has personal knowledge of the Morristown area will be able to help you. I freeze bacon regularly, because we smoke our own and there's no way we can eat an entire pork belly, or even an entire belly half. So we cure it, smoke it, slice it and freeze it. It will keep well up to a year frozen, but it never lasts that long unless I bury a package accidentally under something like beef tongue or soup bones. I've never tried to freeze it after cooking, Cooper would never forgive me if I took his lovely freshly cooked bacon and froze it, LOL. I do cook extra sometimes and reheat it later, keeping it refrigerated until tomorrow's BLT or whatever. Annie

A 12 inch round pizza will take from 8 to 12 ounces of dough. According to thickness you want.After the dough is made, weigh it out and roll into balls. Oil the pans and place a dough ball in the pan and flatten slightly, working the dough towards the side of the pan. Then let it rest a few minutes. Repeat this every so often until the dough reaches the side and up, enough for a crust. Let it raise slightly , pinch the dough with a fork and put into the oven to bake at 400 deg. When tan spots show ,take them out onto a rack to cool fast. Then you can use them right away or freeze , to use later. When cooking the Pizza, place the dough back in the oiled pan , put a latel of sauce on the dough and swish it around, sprinkle some Parmesan or Romano , put it in the oven for a few minutes. Take it out and spread the topping cheese of your choice. Put it back into the oven to finish cooking. A good topping cheese is a mixture of Mozzarella and Provolone chopped and mixed. The provolone gives it a good flavor and doesn't get like rubber when it cools. I use all Provolone. A little trick for baking. Keep a cup of water and brush handy, to baste parts that are cooking too fast. If you can get new Steel pans, they have to be cured in the oven, so they won't stick. Coat them with oil and bake them for at least 6 hours. Never clean them with soap and water. Just water & wipe with a paper towel. I have been using this method for 48 years. This thread got me to wondering why we only have wheat matzah (and the rare box of spelt matzah but of the 5 grains, spelt is closest to wheat - from what I've read it is a hybrid of wheat and a wild grass). So I googled and found that Osem has Rye Matzah this year. Amazon had it by the six pack and I was curious enough to order it. These aren't made with only rye, but neither is most rye bread - the ingredients list shows a mix of whole wheat and rye. At 4.5 grams fiber per slice vs. negligible fiber in the usual matzah, these should help avoid a frequent Pesach problem and "let my people go". :^) (Sorry I just couldn't resist.) I gave a couple of boxes to friends and sent one to Jessy so perhaps she can give another review. They are very thin matzahs, crispy crunchy, with a whole grain flavor (they don't taste like rye bread - not surprising since some of the typical "rye" flavor comes from caraway seeds). They make a nice change from the white wheat matzah. There is also a supplier of oat matzah. But that only seems to be made as specialty for those who can't tolerate wheat gluten and are okay with oats (which have a different kind of gluten) so the price is sky-high and I didn't get any. I didn't succeed in finding any commercially made barley matzah, but I found an interesting article by Deborah Mayaan who makes her own barley matzah. Maybe the recipe is just too dry? Could cut time or temperature. Sometimes it just takes experimenting.

I agree with Linda about putting one disposable pan inside another for added support and pan thickness. You also might check to see if the brownies are done about 5 minutes before the recipe indicates.

OR you can try AnnT's Decadent Brownies! They're so fudgey that I wrap them individual in plastic wrap when I make a batch to bring to work.

AnnT's Decadent Brownies

1 cup butter
20 ounces semisweet chocolate (that's not a typo - 20 ounces - See, they are decadent!)
1-1/2 cups sugar (I like to use half granulated sugar/ half brown sugar per Ann's suggestion)
Pinch of salt
4 eggs
1 cup flour

Preheat oven to 350 F. Prepare 13-inch x 9-inch baking pan by lining with foil. Thoroughly butter foil. Set aside.

Melt chocolate and butter in microwave bowl. Beat in sugar and salt. Beat in eggs; add vanilla. Mix in flour. Mix in pecans. Pour into prepared baking pan. Bake for approximately 30 minutes. Do not overbake; the brownies should still be soft in the middle. Immediately place pan of brownies in the freezer for about 1 hour, or until cold. Cut into 8 bars, wrap in plastic, and freeze. (I often cut the brownies into much smaller bars as they are so rich!)
