need casserole ideas....

Strange to me....but a member of our church is in the Hospice facility...and even though she has not died, her children are making funeral plans. They are saying a week from tomorrow...and I am saying that likely there will be between 75 and 100 people.

So unless they specify something specific, I would like to have 2 different kinds of casseroles. One being a Johnny Marzetti type of thing and the other being something chicken-ey. My standard has been penne or fusilli with chicken, broccoli, onions and green peppers, broccoli and a few carrots with a creamy cheesy sauce.

I hate to offer ONLY a tomatoey Italian-ish ground beef casserole with out offering an alternative. Seems I know so many older people say...I can't eat tomatoes or garlic or onions or spicey stuff...so even without trying it they might assume.

We are limited as to oven space....so pulling out 6 piping hot casseroles in the space of 20 to 30 minutes is a problem. I keep trying to think of something where there would be a huge pot of hot "something" on the stove and another 2 or 3 pots of boiling water and we could cook pasta about 1 1/2 pounds at a time...drain pile it into a serving dish and ladle on some sauce and whisk it to the table, and meanwhile the next batch is cooking.

Ideas?
