Moist pork loin...

Some of you may know that I've been trying to come up with ways to cook very lean pork loin that hubby can eat and will enjoy and still keep them from being dry as a bone... Well I've 'invented' a couple and I thought I'd share...

If you add 1/2 an apple when you grind up pork ( about 8 oz ) you'll come up with the moistest and tastiest patties you can imagine... It makes some tasty pork sausage too... I would have added some maple syrup but hubby doesn't like it...

Yesterday I made a pork loin roast that came out much better than I expected... I've been 'soaking' the roasts in apple juice or applesauce for a couple of hours before baking and they've been coming out rather good... This time I used cherry juice... Not the pure stuff, the cheap stuff made with other fruit juices...

The pork was still frozen, I put it in a freezer bag and filled it up with the cherry juice and let it sit until it thawed out, rinsed it off. popped it into a cover pot and baked it... I didn't check the temperature setting on the oven, it was set at 400 degrees F... Well after an hour or so it smelled as if something were burning... Sure enough, the juices evaporated and left the pan black... I moved the roast to another pan, lowered the temp to 300, added some water and finished cooking it... My oh my..... It was so tasty, still held together but very moist, I may cook my pork loins that way from now on, even if I have two pans to wash instead of one... lol
