Prepping for the holidays??

I don't know what others do, but with Hubs out of town, the fruitcakes came out of the oven, were basted with rum, wrapped, and refrigerated. Now the make-ahead turkey gravy has moved from the oven to the dutch oven and continues to simmer.

Hubs will be home late tomorrow. The weather is somewhat cool (to me) so I'll be able to do some gardening during the day, now that the holiday preliminaries have been addressed.

Yes, I've barely started. Made Fresh Ginger-Molasses Palmiers a couple days ago and they're safely tucked away in the freezer for T-Day open house for our marina friends that stay in town for the winter.

Doesn't sound like much of a start but, hey, it's something done. The docs changed my meds and I've been pretty much flat out for the past couple weeks.

I made turkey stock last weekend for the gravy on Thanksgiving (safely in the freezer) and have made my *list* of holiday baking. I am also having the cleaning crew come in this week to do a top to bottom scrubbing of the house for the holidays.

I have my gift shopping lists done and have started to pre-order present but nothing has arrived yet. So I guess I've started, but I still have a lot more to do!

"So, Ann - how goes the first day??" Spent most of it...at the office! *But* the reason for that was a meeting to work out details of hiring someone to do a task at work that is non-related to my official job, yet which takes up enormous amounts of my time and energy. I figured out a way to get a staff person hired, at the same time help out a coworker who is in a bind at the office, AND make my life easier. So,time well spent :). But, an hour before I had to pick up the kids I put the auto-reply on my email, left a 'I am out of the office this week' message on my voice mail and took a wild chance on going to the grocery store before I went to get the kids. I just found out last night that instead of 6 people for T'giving dinner I'm hosting 14 (gulp). Which is really fine but I was worried about the crowds out getting their turkey and trimmings. I must have lived right in a previous life though because I went to my closest grocery store, got a parking spot RIGHT IN FRONT, and had an actual leisurely hour to stroll around and pick up everything I need. Yippee. So, tomorrow I'll get up and then make a plan for the day. I did get my husband to take down all the holiday boxes this weekend (which now have to be hauled back to the garage on T'giving day out of the way of my crowd :). I am hoping to even get some gifts wrapped. And in a bizarre twist, this morning at work my boss's secretary gave me a huge heavy box from Neiman Marcus. What is it? *LAST* year's Xmas present from boss, which somehow he never got to give me!! I'm going to put that sucker right under the tree when I get it next weekend. Then I'll have at least one gift for me that I didn't have to buy/wrap/set out myself. Ann

Mustangs, I think toasted baguette would be good, I have crackers and some crudite....snap peas, cucumber, red and yellow peppers. I think even toasted pitas or nacho chips would be good. I am not very creative. The herb one lends itself a bit better to the crudite...the red pepper one is very flavourful.

How do you use 2 sinks?

We are putting 2 sinks in our new kitchen. Right now the space has 2 sinks. 1 in the kitchen and 1 in the former mud/ laundry room as a utility sink. What we are doing is merging the 2 rooms together to enlarge the kitchen. We are using the 1 sink (stainless double bowl) as the main kitchen sink. The other sink (farm sink) on the other side of the room will serve as a more of a utility or pantry sink or if we need to we can use it as a secondary prep area or for washing large pots.

My personal preference is the 1st layout. First for the wall oven. If you cook/bake much then having two ovens, especially gas in the range and electric in the wall, is really really nice. The oven stack can also include a warming drawer and a MW or CSO. Second, for us there'd be no benefit in the second layout. With our layout similar to your first we grab stuff out of the frig and put it on the island as a primary landing zone. From there stuff gets prepped and off to the range or ovens. Then often back to the island for plating or in to a warming drawer. BTW, I'd ignore the work triangle. Great bit of marketing but of little practical benefit. Third, I think a range and hood look better aesthetically when looking from the informal dining. Lighting looks much better. I'd move the two over the sink closer together and ideally over the outside edges of the sink to eliminate shadows in the bowls.

Oh, forgot, we did get our niece/her husband's gift a couple days ago. Last week I let Hubs know what I wanted, and he was thrilled. The cookie tray selections have been made and cleared with Hubs to assure to all necessary cookies are on the tray.

We're not having guests at Thanksgiving and Christmas is a low stress thing for us. I've made lasagne in years past, but last yr we got homemade lasagne from our Italian friends (Naples, Italy) who have a local restaurant. Probably do it again this year. They love the cookie tray, so lasagne appears to them to be a good trade. It's easy on me and delicious, probably .... they will do the Christmas dinner cooking. It's a win-win for everyone.

I have nothing done so far which is pretty much my MO every year. Being a procrastinator I always wait until 3 days before Thanksgiving to start shopping/cooking. Then I spend the next 3 days feeling the pressure of getting everything done in time. I generally work better and faster under stress. If I know I have plenty of time it takes me forever to get stuff done and then it feels like a chore instead of something I enjoy doing. The one thing I have started doing ahead of time and will hopefully get done this week is writing out a shopping list and a prep list/timeline. I "may" this year do some dessert ahead of time. I was thinking of making individual pumpkin cheesecakes and I know that is gonna take me longer than making one large sized one. Any one else wait till the last minute?

Flourless chocolate cake, unfrosted,(KAF) went in the freezer Saturday. It joined Ruthanna's (and Lindac's) apple cake, Mom's apple cake x 2(Smitten kitchen) and Ina's fresh peach cake.

Saturday, also made 3 bags worth of cranberry/orange relish. Still need to divvy for freezer.

I'm on my way. I am tempted to make challahs in advance and freeze them but don't know how well they will freeze. Any advice other than wrapping well in paper towels or double plastic, like parbaking? Anyone successful at parbaking?

I hate last minute cooking. hate

I will make doggie bag turkey breasts in advance. Best laid plans...

I was going to say "no", but then I realized that I've spent the past five months raising the Thanksgiving turkey, LOL. It's in the freezer, and will be ready when the big day comes. Other than that, nothing.

We finally finished the "remodel" of the house and it's on the market, and we're buttoning down the farm for winter, so hopefully I can get something done soon. We haven't even set a time for Thanksgiving dinner and I know Ashley is on call and her husband is working. Amanda is working Wednesday night/Thursday morning until 7 am, and I haven't talked to Mother.

So, not only have I not done anything, I haven't even PLANNED to do anything! Somehow, though, I'm sure it will happen.
