I'm craving mushrooms and peppers. Do any of the great cooks here have a good recipe for me that uses them? I'd like to make something with them tonight.

are these mushroom peppers?

They really aren't yellow when they are ripe. They are the color of chedar cheese-orange. Mine when they are yellow still grow larger/fatter at the stem end and eventually the middle collapses once they are orange and turn the mushroom shape. Smaller pods seem to get mushroom shaped faster on my plants for some reason. I also have red ones that are a little different than the yellow.More barrel shaped, not fat at the top but the bottom end eventually shrinks to make the mushroom shape. My yellow ones get about 1 3/4 - 2 inches in diameter by about 4 inches long.Big fat pods. they shrink to about 3 inches when the middle collapses to form the mushroom shape. When I picked some that were orange but not shrunk up the seeds weren't ready yet. I usually only get pointed pod ends on the smaller pods or the young ones and mostly on the red mushroom plant. Usually the ends are like green peppers, segmented and almost flat or rounded with no segments rather than pointed, but some do have points at times.

Hi Alice! You rock!!!!!!!!!!! I know exactly what you mean about the cravings. Ice cream is one of my "special" foods-----I buy those "Skinny Cow" ones---they have 130 calories, 2 grams of fat, and are 23 grams Carbohydrates. They're round ice cream sandwiches, a pretty good size, too. Six in a pkg. for about 4 bucks---no, I don't work for them. lol I may have to buy some stock, though! It sounds like you're well on the way to your goal weight. I've got at least 30 more lbs. to go, have lost about 15 in the past 3 months. I seem to fluctuate... a lot! I don't know if you read the other thread, but DH has diabetes problems so now he's cutting back on all of his sweets, etc. So, now it should be easier to lose. Take care, have a great day and post with us----we're all doing it together----losing one lb. at a time. sue

Odd Cravings -- Cabbage soup

Renee, my borscht recipe has cabbage, but it has a lot of beets and I know how you feel about those. (grin) I love cabbage, I ought to make it more often and I just don't think about it. It's not peppery or spicy, but this is one of Ashley's favorite soups. I never use the half and half, just whatever milk type is in the refrigerator. Cream of Cabbage Soup 1 quart chicken broth (I use my home canned stuff) 2 celery ribs, chopped 1 medium head cabbage (3 pounds), shredded 1 medium onion, chopped 1 medium carrot, chopped 1/4 cup butter 3 tablespoons all-purpose flour 1 teaspoon salt 1/4 teaspoon pepper 2 cups half-and-half cream 1 cup milk 2 cups cubed fully cooked ham 1/2 teaspoon dried thyme Minced fresh parsley In a large soup kettle or Dutch oven, combine broth, celery, cabbage, onion and carrot; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. Meanwhile, melt butter in a medium saucepan. Add flour, salt and pepper; stir to form a smooth paste. Combine cream and milk; gradually add to flour mixture, stirring constantly. Cook and stir until thickened; continue cooking 1 minute longer. Gradually stir into vegetable mixture. Add ham and thyme and heat through. Garnish with parsley. Yield: 8-10 servings. Ashley likes to stir in a spoonful of sour cream when it's served, I often sub my homemade yogurt for that and she doesn't complain. Annie

I make a hot sandwich using peppers & onion, but adding mushrooms would make it even more tasty.
On a hot dog or hoagy bun, open face, put some mayo and I like to add creamy horseradish sauce, pile on some roast beef, then, top with sauteed green pepper, onion and the muchrooms. Top with swiss cheese, Bake in an oven until the cheese is melted over all, about 20-25 mn. Yum!

I just made baked stuffed bell peppers this weekend and did it different than usual and we loved it, first time my husband really liked this dish he normally is not a big fan of stuffed bell peppers.

I cut the tops off of the peppers (4 large) cleaned them out then put in a microwave dish with about a TBS of water and covered them with very wet paper towels, I microwaved them on high for about 10mins (this steams them).

I browned a lb of lean gr beef with diced onions and drained it well, I bought 2 of the microwave pouches of Uncle Bens Ready rice which was a Garlic with wild rice flavor. I heated those according to the directions, then mixed the rice with the gr beef and onions, I had a jar of Barilla Mushroom and Garlic sauce, I added about half of the jar to the mixture, mix well.

I sprayed my pot with Pam set the peppers in it and filled them half full with the meat mixture, then added a layer of grated cheese (colby jack) finished filling with the mixture, top with another layer of grated cheese, then poured some of the Barilla sauce on top of each, put a few TBS of water in bottom of pot.
Cooked uncovered in the oven at 400 for about 30 mins.
The peppers were not soggy but had a nice crispness and the filling was awesome. I did add a little garlic salt and pepper to the meat mixture. If I had had mushrooms I would have added some to the meat when browning but the sauce had quite a bit in it.

I will definitely make this one again.
