sunday night...wild yeast !

I have been growing my own wild yeast culture. I no longer have to use commercial yeast unless I choose to. It has been the most amazing project to undertake. You can substitute wild yeast culture in any of your yeasted baked goods, it provides more than adequate leavening. I used my "mother starter" which is a firm starter created from the original liquid starter and made pizza dough. It was the easiest I have yet to make. Here is the slide show of the pizzas I made for lunch. I have 2 more pieces of the dough in the freezer. So...lets see...use of kitchen... Frig. Twin for cooling- soapstone counter for kneading- Miele oven and baking stone !!
