Turkey instruction overload

It seems I cant turn on the tv or log on without being bombarded by conflicting advice on how to cook a turkey. I have ordered a 22 lb bird from our local turkey farm. I will pick it up on Wednesday. My usual plans are to do a slow cook with basting and to rely on a remote thermometer. That is what I did last year and the results were great. I didn't plan on brining, not even sure I would have the time.

So now I keep reading that if you don't brine, your bird will be horrible. Same with high heat first. Alton Brown made one for his show and he brined it and then put it in the oven and said that he won't open the oven until the turkey was done. What about basting, and tenting? The aol page also said to rub a butter/sage mixture under the skin. Well, my fil is not adventurous at all. Wouldn't that be a strong flavor? The same tip site also said to stuff stuffing under the skin. Yes, the breast would stay moist, but is that necessary?

I know all the info out there is to help, but honestly, it is not. I'll go back and read the how to cook a turkey thread (I think I saw it), to see if there is something I must do as I trust the opinions here more than anywhere else.

Jo
