I think most beans are ok: baked, refried, black, etc. especially if they can be used in a recipe. I think some canned corn is ok. Green beans are only fair.

Mixed vegetables....no.
There is a zucchini and tomato concoction, but it has kind of a bitter taste.

From a can I only use beets, tomatoes or beans. (non green)

I only use tomatoes, creamed corn, B and M baked beans, tomato paste....and pineapple.

I can my own, so that may be "cheating". I can green beans, greens like swiss chard, carrots, beets and dried beans (in soup).

I prefer corn frozen, as well as asparagus. I also freeze cherries, blueberries, rhubarb but I can apples. Oh, I never can squash either, I freeze it.

I don't can many veggies; generally we prefer frozen. But I do can tomatoes (OK, that's a fruit.), creamed corn and dried beans or shell beans. No green beans. DH loathes them.

I think that's it. Corn, squash, chopped peppers and hot peppers, everything else goes in the freezer.

I can green beans and carrots and sometimes a "soup base" with carrot, beans, onion, celery and potatoes. It's a quickie meal with some leftover meat. I can add brown gravy or tomato based sauces and I've got stew in about 10 minutes flat!
I use store-bought beans (i.e. black, kidney, garbanzo) and tomato paste, pineapple, olives. I do keep a few cans of emergency stuff like sardines, chili, clams, etc. because we occasionally lose power and it's easy to make on the wood stove!

Everything else is pretty much fresh or frozen. We rarely eat prepared foods (except potato and tortilla chips...my weakness).

I'm not counting anything home canned in this answer...different "can" altogether!

All my beans with the exception of green and yellow are canned, brown, lima, kidney, black, cannelli, pinto etc.

We also love canned cream corn but that's just 'cause we love canned cream corn with some comfort foods like meatloaf, not 'cause it's a great culinary delight.

Yes to canned corn, tomatoes, pears, peaches, black beans, pinto beans, garbanzos, cranberry, olives, pineapple (I prefer canned pineapple to fresh, actually). No to canned peas, green beans, spinach, potatoes, and probably a lot of others I can't think of.

Deanna, I do the same thing...can potatoes, celery and onion, sometimes with carrots or corn. And tomatoes with onions and peppers.

As far as storebought vegies go...we just cleaned out the pantry and packed up a couple of cases of tomato products up for the food bank. They were from the year I freaked out because I didn't get any fresh tomatoes to can. And some beets. We like canned beets, but we decided we're spoiled on home canned.

I looked and there's canned corn (for soups and stews...I froze some sweet corn this year...it's soooo good). Creamed corn for corn chowder and those times when one of us gets nostalgic. Home canned creamed corn is just not the same. I usually can dry beans, but for .48 a can I grabbed an assortment of garbanzos, kidneys, black and white. Tomato sauce and paste, tomatoes with green chilies, green chilies, olives. Do artichoke hearts, water chestnuts, baby corn, jalapenos and chipotles count? And, yes, there's canned peas in there. DH's comfort food thing is canned peas. yick.

Barnmom, I love pineapple in any form..but I just discovered frozen tidbits from TJ's...for a buck 49, you get a couple of cups..Fresh and good...
Pineapple is a very popular fruit around here..next time I hit TJ's I'll be bringing home more than 1 package!!!

The only veggies I will use from a can are navy beans, great northern beans, tomatoes, roasted peppers, artichoke hearts, chilis and beets. I do also use green beans, the flat type, but I cook them southern style which means I first fry ham or bacon in the pot to get some fond in there, drain the beans and add to the pot with some water or chicken broth, an onion, and some garlic cloves, and cook for two hours or more. That's the only way I'll use canned green beans. I know, I know, you are all laughing because I cook them so long. They are yummy that way!

The only frozen vegetable I keep on hand is peas. And I keep canned peas and canned corn in the pantry too. Canned peas are a must when having hot chicken/turkey sandwiches with homemade fries. It is a tradition. And about once a year I make creamed peas on toast.

I'm one of those crazy people (like Ann_T LOL!) who like canned peas. Especially those little petite ones. I probably eat them twice a year, but now I'm hungry for 'em! My DW hates canned peas, and most of the veggies (that aren't out of the garden) are frozen.

That crispy canned corn is good now and again also.

Thanks for the responses. Interesting that some of you like the peas, because that was the beginning and end of my journey: Back when Max was little I compared the price of baby food peas to big people peas, and bought a can. My first thought was that they were way too salty, my second thought was that the salt was trying to mask the taste of those peas! I chucked the can.

Another interesting thing is that so many of you have other canned beans, e.g. pinto beans, navy beans, etc. Kind of makes me think that there are some staple ingredients out there that I've never used.

Jarred stuff is considered "canned" right? I use roasted red peppers, applesauce, and lots of things from TJ.

I'll use canned tomatoes and beans, but that's about it.

My father loved canned peas, those awful little gray things, they made me gag. My mother used to try and serve them, I couldn't choke them down. I remember "sitting at the table until I ate them." I never did, I guess mom gave up because she started getting frozen peas. Those I can eat.

I like canned - or glass jarred peas but I use them only in certain dishes that call for that distinctive flavour, as in a beef stew, or an old-fashioned mix of peas and carrots such as my mom served when I was small. I also love frozen peas in a chicken a la king or vol au vent, and occasionally use them in a mixed vegetable pot.

Other canned goods I keep on hand are whole tomatoes and tomate frito, some kidney and baked brown beans for a chili. When I have to leave Wolfram on his own for a meal or a holiday I buy a good German brand of large-tin cooked stews or meatballs in case he wants to open them, but usually he never does and we have to eat them when I return LOL.

I would buy creamed corn once in a while if they sold it here but I've never seen it in Spain, so I do buy small tins of corn niblets, again for adding to a vol au vent sauce or creamed tuna on toast.

DH loves canned green beans, so for most of our marriage that's all we ever had, except for when we had fresh green beans. However, we went to a pick your own farm this summer and picked a lot of green beans, which I froze, and that's what we've been eating ever since. DH also prefers canned corn over frozen. I like frozen because I can use as much or as little as I like. I don't really notice a difference in taste. I don't like creamed corn from a can cause it's too soupy. Other canned foods we'll eat are hominy - the golden being the preferred kind, black-eye, field, and purple hull peas, beans of all kinds, except I'm not fond of kidney beans, and tomatoes. I don't do canned spinach (although I secretly liked it as a kid - go figure), canned asparagus, (DH made the mistake of bringing some home from the store once, when I served it, he understood why I asked him, "What were you thinking?!") The other canned greens you'll find in the southern market, and pimientos. I've used them over the years thinking that's what you're supposed to do, then I wondered why on earth I'm using these watery, mushy, flavorless peppers when I can use fresh peppers. I do not like pimiento cheese, and what's the point of using them in anything else? Oh, and I don't like canned English peas.

Obviously, I don't have a bias against canned veggies. I don't use them all the time, or even most of the time, but they come in handy when I'm not feeling imaginative.

Oh I forgot about hominy. I eat the golden hominy from a can. I don't like the white hominy.

Beans... I have about a dozen cans of beans in the pantry right now, a mix of pinto, white, black, and garbanzo.

I actually like canned peas in Rice a Roni... Call me a freak...

I don't mind canned peas (La Sueur brand, tiny baby peas or green giant sweetlets if you can't find the others), and for "creamed peas" that is what we use for sure. I like them from a can or frozen or fresh, they each have their uses and characteristics. I agree canned peas are a must have on hot sandwiches LOL.

I think I am the only person that doesn't mind canned potatoes. I also like the beets, and of course tomatoes and tomato sauce.

While I don't like the flavour, colour, or smell of canned corn at all, I can tolerate most other canned veggies - once again, for what they are. I don't seek them out specifically but in a pinch they are edible.
