? about Buttermilk in Recipes

I only buy buttermilk when it comes on sale. I don't use it often.

However, I've seen a few recipes lately that call for it, and I'd like to try them. Bread, biscuits, etc.

Has anyone made their own buttermilk by putting vinegar or lemon juice in milk? Does it really work in baking recipes?

We only drink 1% milk (not sure if they sell that in the US). It's not skim, but has less fat than 2%. Would this still make buttermilk?
