Canning spiced apples

Do you keep the skins on? I haven't done this for many years and my kids want spiced apples like I used to can for them. They want them for their children (my gkids).

I use the recipe with the red hots and can't remember if I left the peels on or not. Sure would be easy to just core the apples and slice them but don't want to do it if the skins get tough.

The link below is the recipe for Spiced Apple Rings from The National Center for Home Food Preservation and they peel the apples.

For $10 at Menards or $20 at Bed Bath or Beyond you can get a manual Apple Peeler, Corer and Slicer and use it to make quick work of peeling your apples.

I have one of those and it is great for making pies but the slices are too thin for spiced apples, I think. I wonder if you can get just a peeler?

I know, Applenut :-( When we purchased this home, and the previous owners showed me where they espaliered this lovely little Anna (they wire used to pull the branches down were embedded into the branches, I cringed), it was up against the house on the north side! I didn't have time to dig it up in January, and find a new home, because where it needs to go isn't ready, yet, to take the tree. So, it has to stay there until I get the lower part of my yard landscaped. It's starting tomorrow, in fact!! I've got a nice spot on the east fence that should get some great sunshine all day long until the very late afternoon. It will be MUCH happier and healthier over there, along with the other Anna and the Dorsett Golden. Now to get the Dorsett Golden and the Annas to bloom at the same time. My Dorsett still hasn't bloomed. the one Anna I have (which is ridiculously precocious) has a TON of lovely little skinny, non-cross pollinated apples on it! My other espaliered Anna looks like it will also have quite a few apples. Now - to keep the #@$%* rats out of my trees. I've armed myself with several bait stations. I am declaring war on the Root Rats. Last year, they ate every single one of my 20 apples off my little espaliered Anna. That I babied and tried to protect. I'm done being a nice guy. jkom, that's funny, my mother loved pickled pigs feet, and their similar product, pickled pigs knuckles. The person who taught her to eat them? My Aunt Amy, whose real name was Yoshiko and who came to the States with my Uncle Chuck, he met her and married her while he was in the service stationed in Japan. I always liked liver, although I seemed to be an oddity among my friends for it. I still like liver with bacon and onions, although I seldom eat it now on the advice on my doctor. Peppi, all of those things are also available here, and none are considered particularly odd. In fact, Jiffy muffin mix is made here in Michigan, and I've always got canned salmon, canned sardines and canned smoked oysters in the pantry. I don't particularly like the oysters, but Elery loves them. I don't really like headcheese much either, truthfully, but I can get it and I've eaten it. Ashley still likes the Mrs. Grass' chicken noodle soup in a box as well as the Vienna sausages in a can. So, although I'll eat liver and headcheese, I think "non-dairy creamer" is weird, how can it be creamer, but be non-diary? I haven't figured out yet what exactly Cool Whip is, but my brother eats it frozen, like ice cream. Annie

I never puree my applesauce. I like a few chunks and it's just fine. You can add however much sugar and cinnamon you like as it doesn't affect safety. If you can find it cinnamon oil is a nice touch as it keeps the applesauce a nice light color. It's also great for pickles. Cinnamon can get bitter after canning and during the period it sits on the shelf, so it is one of those cases when less is more. If you use windfall or bruised apples for applesauce use a recipe like the one from Bernardin that calls for a bit of added lemon juice. Windfall and bruised apples have a higher pH than unblemished ones. There is an approved apple pie filling recipe at the NCHFP, but to thicken it you would need regular (not instant) ClearJel. Or you could make the filling and not bother with the ClearJel. I just can spiced apple slices with sugar, lemon juice, vanilla, cinnamon, nutmeg and mace. Terri, mine took a long time to cook down also, and in the future I'd puree them first, rather than just roughly chop in the fp. I have very dark butter but it is gooood. And yes, I had some that stayed really firm for a long long time. I had a basket of mixed 2nds from the Farmers' Market so with two baskets - $1 a basket - I had more than enough apples. Apples are certainly cheaper to work with than other fruit!

I used the NCHFP recipe and peeled mine. I let my hand cranked peeler do the work then I cored and peeled them by hand. Was a little disappointed that I wound up with the apple slices floating to the tops of my jars and a space of about 1/2 inch of liquid only at the bottom of my jars after I WB canned them. Probably didn't cook them long enough before canning.

You can peel ONLY on the Peeler, Corer, Slicer, which is how you use it for peeling potatoes. I slice the apples on my mandoline after they are peeled in order to cut the slices evenly, then remove the remaining core in the slice with a round canape cutter, the removable hole portion of a donut cutter, or an apple corer - whatever fits the core size for the apples you are using. Even a paring knife will do the trick. It's easier to core them after they are sliced if the apple isn't exactly perfectly symmetrical. I think the NCFHFP mentions using a melon baller.

I can't imagine how I could just peel and not core and slice with my apple peeler. Maybe mine is indeed Just for apples. The slicer part is part of the peeler part on mine.

Madonna, I too have had that problem with the fruit floating. Also, once it starts to float during the canning process, often the jars tip and then all the juice gets out. Any ideas anyone?

Ryse, I can just peel, or I can peel/core/slice, but I cannot core and peel with my peeler.

I peeled the apples, then cored and cut them into wedges with a knife, I cut them into 8th for a nice wedge instead of a thin slice.

Mine also floated. I tried heating the apples a bit longer but the apples cooked too much and got soft. Since my other fruit like pears and peaches often float, I'm assuming the apples are going to also.

They're nice and pretty pink though....
