Double Oven - Speed + Traditional

In the planning stages for new kitchen. I thought I had routinely saw Miele and others with a double oven set up where one was a speed oven, and the other a traditional convection oven. I only see 24" speed ovens on the Miele website. Was I dreaming when I saw the double oven set up or was this only in a (too narrow for me) 27" regular oven and 24" speed oven + fillers? Looks like GE Monogram might have a 30" double oven/speed oven.

The gist of this is that we want two ovens, but don't need both to be full size and would prefer not to have a separate microwave (which we rarely use), and we have a speed oven in our weekend house and have come to love the versatility.

FYI, appliance questions generally get more responses when posted on the Appliances forum here.

A lot of specialty built-in ovens like microwaves, speed ovens, and steam ovens are 24". Makers generally supply matching trim kits to make them look right above a 30" conventional wall oven. You can get a trim kit to make a Miele speed oven look right over a Miele 30" wall oven.

peter is right on both counts

that being said, we have miele speed oven over wolf "e" oven and did not buy trim kit., which was pricey.
we had the cabs made specifically for the size of each oven.

i love the look since i am not a fan of SS.
also, i am not a matchy matchy person, so it does not bother me that oven are not the same make.

I use my steam oven all the time, but I don't really think that is useful information to _you_. What kind of cooking do you do? How often do you cook? Are you feeding a family of 2 or a family of 5? I will say that with a steam oven there will be a bit more of a learning curve than a speed oven. Most speed ovens are very easy to use. Many have menus that let you pick the type of food you're cooking and the quantity and boom, you sit back and relax while it does its job. Are you willing to experiment and learn more about a different type of cooking? Do you have time to do that? Like speed ovens, steam ovens are quite versatile, particularly combi steam ovens (these have convection too). They are not just for steaming vegetables as Gary makes them sound. I like them a lot for roasting, for the past few years I've done the Thanksgiving turkey in mine and each time they've come out quick and delicious. Another use is reheating. Leftovers taste great heating in there vs. a microwave. Though if you're going to be doing mainly reheating, a speed oven might be a better bet.

We have a stack of a Miele CSO and a Miele SpeedOven in a tall cabinet. The SpeedOven is at about eye level. I love the combination and would absolutely recommend it, if you have the space and the budget. But I am sure I could easily adjust to having the SpeedOven under the counter. We have a traditional gas range, and it comes with an "undercounter" oven, of course. We use this oven quite frequently, because of its very powerful infrared broiler. And that requires close inspection of the food while it is in the oven. Only takes a couple of seconds to go from barely brown to catching on fire. If I can handle staring deep into my oven, I am sure I can handle a microwave at the same level. That placement is maybe not ideal, but every kitchen is an exercise in compromises; and this seems to be one of the less annoying ones.

I own a double TurboChef wall oven that has gone kaput. I loved it while it was working, but now parts will no longer be available, so have to face a replacement. I also have a 48" Bluestar so I do have quite a bit regular oven space. I'd like to make the replacement as painless as possible and I'd like to get a steam oven. I would consider a double oven with steam oven or two single ovens---steam and speed. The cutout is 28.5 wide and 48.875 high, 24" deep. The Thermador double steam/convection is 48 1/8" and I like the style available that isn't so sleek. There is a Bosch that is very close to the height but doesn't get very good reviews. Alternative would be getting two single ovens. What would be involved if I choose to do this? How much space between the two ovens is needed? It seems more complicated. Any similar experience with this type of replacement is most appreciated.

I have two regular convection ovens because I need the space. I would get one as a third oven though if I had room. It would be the most used oven if you get the right one because it acts as a regular convection oven too. The CSO gives you control of humidity. The use and care manual for the Gaggenau CSO gives you a good idea of what these ovens can actually do. Read the manual to whatever brand you are looking at to see what it does. They could add moisture or vent it out or just use the moisture from the food cooking. If you don’t really pay attention to humidity and how it affects cooking now the Gaggenau manual gives you some idea of what is best for different types of food. If you steam bread, it would be useful for that. Do you steam cook now? I don’t because I like the flavor from browning more. If I do need steam, I would just do it in a pan or pot. I add a tray of hot water to my oven if I need more humidity. If I need less humidity and drying to promote browning, I open the door to vent out steam and turn on the convection fan.

I have the GE monogram 240 speed oven and wolf e series oven.

We have the Miele speed oven/MW and traditional 30" below. We did use a trim kit. I can't say enough about how well this set up is working for me. We use the speed oven probably 75% of the time. Today and tomorrow I'll be preparing for a family party of about 65 and both ovens will be in full use. Here's a pic from a couple of years ago when we were just finishing. Pretty much still looks that way cause we haven't yet finished up all the touches.
