Cerval(l)ata....anyone familiar with this Italian sausage?

Ok. Lou has to have had this, right?!?!?

I bought it in NY and the butcher said it had pork and lamb (!). It was also marked as having parsley and cheese. He said grill it or pan fry it. I'm gonna do half of it for Dick tonight and freeze the other half pound so I'm interested in knowing your experience with this one.

By Googling, I came up with this as a Milanese sausage to one from Apulia. Ingredients ranged from pork to veal to brains. I don't know what the Italian is for chacun a son gout but I'd say it applies here. Maureen

I tbought it was cervalate? A summer sausage....similar to Thuringer.
Grilled? I had it sliced in a sandwich....it was part of "what's to eat" growing up.

Linda, the butcher's shop spelled it with one l but on line is is more often with two l's.

Sliced in a sandwich? This sausage is about the size of a good fat hotdog. I guess you could slice that if you wanted to. This is most decidedly a fresh sausage.

If you have a car, then I would suggest you go to Draegers Grocery in San Mateo on 4th St. and have the most fun ever. Outrageously expensive but the best upscale grocer in the Bay Area. Since you've been to Spanish Table in other cities I wouldn't bother with the Berkeley location, it's pretty small although it is nearby the Cheese Board, which is a great cheese store run by a collective (very Berkeley). If you like seafood, then eat at Sea Salt on San Pablo & Dwight Way in Berkeley, an excellent place for lunch that is one of my favorites. If you do have your car when going to IKEA, then Townhouse Grill in Emeryville has an excellent burger and good salads, but Sea Salt is not that far north, just a few minutes, and is much better food. Their lobster roll is very tiny but absolutely choice and with a bowl of their excellent clam chowder (full of bacon and properly unthickened), my hands-down favorite lunch in the entire East Bay. Good wine list, excellent coffee, very laid-back at lunchtime. Weather in the Bay Area has cooled off and the fog is back, so bring that Polarfleece vest, especially for the Marina.

We're done here. Shaun, that dinner guest is very handsome! Jessica, I hope they fixed the dishwasher. L2C46, that is a very cute turkey appetizer, a vegetarian option is always good (grin) Here we had 7. Ashley and Kevin made it, still no baby. Amanda, Dave and the kids and me. Mother went to my niece's, it was "her turn". Mother is in great demand on holidays, LOL, and came here last year. Stepmother had dinner with her sister, saving me 120 miles of driving, one more thing to be thankful for. We had a cheese ball with Ritz crackers to start, Dave loves that cream cheese/cheddar/dried beef/green onion mix, so I always make it for him. We also had some rabbit from the smoker to snack on while I got dinner "around", along with home canned pickled beets, sweet and dill pickles and olives. The main menu was: Turkey (a 21 pounder for 7 of us, both girls took leftovers) Sage and onion stuffing (I wanted to add oysters ala Seagrass but was roundly voted down, so Elery and I will have that) Mashed potatoes (with cream and butter, not kosher at all) Gravy Butternut squash/whole wheat dinner rolls Broccoli with cheese sauce Maple glazed roasted sweet potatoes Fruit salad Fresh cranberry and apple relish French Silk Pie Pumpkin Pie Ice cream cake with M&Ms Happy Thanksgiving. Mtn: Ever since you first mentioned making Spring Rolls and posted that recipe, I've been making them myself . . . but not with beef. I use either shrimp or pork. I tried tofu, too, but didn't much care for it like that. I was having a bit of a time because the first batch of "spring roll skins" stuck to my quartz counter, then to a thin cotton towel, then to waxed paper (LOL). I also had difficulty getting the rolls tight enough. But, they turned out delicious. The next day I was having my nails done and mentioned to the Vietnamese guy who always does my nails about my making them. He's a great guy and a good cook (better than his wife by far, so he does most of the cooking). He and the other nail technicians gathered around me, all giving me helpful hints . . . and all were horrified that the original recipe called for beef (LOL)! And so, I'm getting better and better. I was coached to not let the skins set in the warm water for the advised time, as they continue to soften once out. And to make them on a wood cutting board. I do use cooked quinoa in place of the rice, as we don't eat rice. They all shook their heads at the quinoa, too. I tried at first making the rolls without rice, quinoa or the like. Bad move! Now, though, with the quinoa, shrimp, shredded carrots and greens, etc. they almost look restaurant worthy. Thanks again for the recipe!

Happy to hear your lunch was a hit. It sounds delicious. My grandmother used to make apricot squares and used a scallop edged tool for the lattice...so pretty. My aunt gifted me a scallop edge cutter, but I have never been successful with the dough and it always ends up undercooked on the bottom, but then again I’m not much of a baker. Speaking of which....I did try your bread. I found it did not come together with the 1 1/2 cups hot water, I needed to add more. Also, I cooked it in a Calphalon pot since I don’t have a dutch oven. Well, it was a total bust. Took an hour to get it browned on the outside and it never cooked on the inside. I realize now I did not let the oven preheat long enough snd maybe it’s the pot? Maybe my flour was old? I followed all instructions to the letter. I am going to try it again with fresh flour, but you don’t find you need to add more water? Thanks for any suggestions.

We get kosher "cervalat" from the butcher. It's like a very spicy salami. DH likes it on the grill, but he also likes grilled salami, which I find gross.

I never heard of it as an Italian sausage but my immigrnt German-Jewish inlaws always got it and liverwurst and something called 'aufshnit' from a kosher German wurst-maker in Washington Heights years ago. It is a garlicky salami best served on good rye bread with a little mustard. I have bought it many times from my kosher butcher and always hang it to dry before cutting into it. But it has never tasted as good as the ones my mother-in-law got years ago. I am retty sure they were hand-made in the shop where they were sold.

Well it appears that there are many variations that come under this word cervalatta.

Dick was not wild about it, so I am still looking for any Italian cooking uses for the other half pound I have.It was quite a lean sausage when cooked - and as I said, very meatlike rather than sausage-like. Maureen
