Two seemingly unlrelated questions: Anise / Cookies without fat?

I have some anise I need to use up and thought I'd make some cookies this weekend. So I just searched the internet for some recipes. The weird thing is, I found several recipes that don't have any butter or shortening in them. Don't cookies inherently need to have some fat in them? Or did I make up that little tidbit in my own head?

And since I'm posting here with that question anyway, I'll just go ahead and beg for any great t&t recipes using anise. Sweet or savory is fine. I'm determined to use it up this weekend.
