can I paint stained wood bypass closet doors?

I'm almost finished painting my study, one of the last things to consider (this room was originally the garage, then a bedroom, now a study) is the set of dark stained wood bypass closet doors. There doesn't seem to be a lot of finish left (house was built in 1962) on them. Can I sand, wash down, prime, and paint? I want to paint them the color of the walls, then do some kind of paint effect, or stencil (unless someone has a better idea). After I'm done, should I put clear poly on top to keep from chipping?
