Sheetrock over Plaster Questions

I'm going to hire a plaster specialist to see if the walls and ceilings in my rental can be repaired. If not, I was wondering if I could remove the woodwork (baseboards and crown molding) and put sheetrock over the plaster, then return the woodwork. Has anyone done that before? Would the wood most likely crack? What about the electrical wall outlets? Would they be recessed too deep to put the plates and light fixtures back on or would I have to hire an electrician?

Mostly, I'm afraid to remove the plaster because of the lead paint and partly, I'm afraid of what I'd find (termite damage, etc.) if I did remove the walls.
