Comments (11)Yep, 2 different things. The HFCS has been processed to be higher in fructose, as it is a more concentrated sweetness. Also, where there are no difinitive reports, much research points to HFCS contributing to the obesity epidemic. It could be because HFCS is so sweet, it makes our taste buds expect that sweetness and our bodies crave that sweetness, or it could be that the altered chemical structure actually makes us store more fat in adipose tissue. None of the research is overwhelming, but I'm convinced that it's bad. Very bad. I think HFCS may be an ingredient in some regular corn syrup that you buy for cooking, check the lable and see. I use brown rice syrup as a substitute when I need it, but there are only a few things I make that include it. Pecan pie, which is a once a year endeavor, is the only thing I can think of right now. Oh, my kids' energy bars too. I make those probably once a month. Basically, I avoid HFCS at all cost. I don't necessarily avoid corn syrup, but I try to go light. Fructose does occur naturally in foods, particularly fruit, so it's not the fructose that's bad (interestingly, and probably more that you want to know - fructose is the fuel source for sperm, which is unique to that structure, the rest of the cells of the body have to break fructose down into sucrose and glucose in order to use it), it's the altered chemical structure of HFCS that's bad. Comments (12)A great place to check on substitutions for ingredients is The Cook's Thesaurus. The link below will take you to syrups (liquid sweeteners). On a personal note, I avoid high fructose corn syrup at all costs, and use that wonderful, buttery-flavored, Lyle's Golden Syrup as a substitute for light corn syrup. Comments (10)I agree with golden syrup as a substitute. Or cane syrup. These will yield a darker product and the flavour might be more caramelized. Having said that, I use regular corn syrup in all recipes that call for "white" corn syrup all the time. I am not sure about honey, as the flavour might be too strong depending on what you are making. I found this on a website called cooks dot com (with, you know, a real dot LOL). I have never tried it. LIGHT CORN SYRUP SUBSTITUTE 2 c. white sugar 3/4 c. water 1/4 tsp. cream of tartar Dash of salt Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often. Comments (4)Party, you do not use milk, the pudding gives the sauce a nice flavor and you can not tell it is pudding. Just a nice syrupy glaze. My husband and kids always want a lot of the syrup on theirs. I usually use instant if I have it on hand.
