Sure, Natal. We had it first at Jinx & Jefferson Morgan's boutique hotel and restaurant on Tortola in the BVI, The Sugar Mill. They write (or used to write) for Bon Appetite Magazine and everything in their restaurant is drop-dead delicious! I bought their cookbook, "The Sugar Mill Caribbean Cookbook" while we were there and have cooked many great dishes from it since then. I haven't found a bad one yet!

*Corn Timbales with Basil Cream*

Timbales:
1 1/2 cups cream-style corn
2/3 cup grated Swiss cheese
3 eggs, beaten
1/2 tsp salt
1/4 tsp paprika
a few drops of hot pepper sauce

Basil Cream:
2 cups heavy cream
1/2 cup chopped basil
6 basil sprigs
. . . . . . . . . .

Preheat oven to 325-degrees. Stir together all timbale ingredients. Oil or butter six (1/2 cup) ramekins. Pour mixture into ramekins and place in a deep, baking pan. Pour boiling water into the pan until it comes halfway up the ramekins. Bake for about 20-30 minutes, or until knife inserted in timbales comes out clean.

While timbales are baking, simmer the cream in a heavy medium sauce pan until it's reduced by half. Stir in the basil.

Remove timbales from oven, and allow to settle for 5 minutes. Run a thin, shart knife around the edges of each timbale to loosen. Place plate over each timbale and flip them onto the plates. Spoon on the Basil Cream. Garnish with a basil sprig and serve.

Makes 6 servings.

Beautiful Lynn! That is what we usually do - I enjoy cooking a special meal at home, setting a nice table, candles, etc. But this year hubby insisted we go out - our anniversary was the weekend before and I cooked for that. So much more intimate staying home, IMO. However, Friday and Saturday we did a nice overnight antique trip, so that was a nice way to celebrate both occasions.

Thanks for all your kind words! It was a lot of fun this year decorating for Valentine's Day. Probably because my big decorating projects are done for the time being and I was needing to decorate SOMETHING ;^D

Oh, by the by, I worked for caterers and was in private aviation and learned one thing I have never forgotten: when you plate your food, place the meat in front of the person at 5:00. In other words. the meat should be at your right at approx 5:00 on the plate lol

Never knew that ooopsie. One thing I also learned when I traveled through New Zealand & Australia several years ago...is when you place your flatware across the top of your plate after eating, that queues the waiter you are done. I put my knife across the top of my plate throughout the whole meal, so have changed my ways...LOL

Awwww, thanks for all your nice comments! Although our MBR and bath are done in a romantic style, it's fun to bring that into another part of our home, if only for a couple of weeks each February (and at Christmas, too).

Oopsie: that's an interesting bit of info I'll definitely use. I've gotten in the habit over the years, of putting the veggies in front, in hopes my kids will eat them without my constant reminders ;^D They're older now, so no need for that anymore (LOL)!

Md: actually, isn't "bream" some kind of ocean life that certain whales eat? Plankton? Hmmmm, it sounds familiar, but "my bream" is, sadly, only too fast typing by someone who never learned how to type in the first place (ROFLAO!)

Oh that sounds and looks soooo wonderful. I miss cooking like that. I'm not excited for my kids to grow up and leave the nest but I do look forward to having that time to lavish on cooking and spending w/ DH!
