help making cherry pepper shooters

Scott and I love these - cherry peppers stuffed with prosciutto and provolone. But holy cow, are they expensive...over $7 for a 9 oz jar. And we can finish it off in no time.

I'd like to try to make them - not sure if I should look for already marinated cherry peppers and stuff them and put them back in the marinade? Or should I get fresh peppers, and stuff them and marinate myself?

The label says "packed in: vegetable oil, olive oil

And the ingredients say pickled cherry peppers(with the pickling ingredients listed), prosciutto, and provolone.

so if I pickle fresh ones, do I add oil and vinegar?

Any safety issues?

Thanks for any help.

Stacy
