I bought some good Balsamic Vinegar...

My intentions were to have a bottle of aged, pricier (hopefully that meant smoother) balsamic vinegar for bread dipping, which I love. I bought some and noticed the bottle was a little dusty and assumed no one was buying because of the price and thought nothing beyond that. Well, I was eating my bread and looking over my cute little bottle and the expiration says October 26th, 2010. I made a couple of salads and have eaten too much bread. Any more uses? Do you think storing it in the fridge will prolong it? I had no idea they had expiration dates! Initially I bought to keep as a dipper - next time, after I read the expiration date, I guess.
