I don't have my recipe, because I just make it...but I love a Mornay sauce made with Swiss cheese for Cordon Bleu. I found this recipe on the web, and it sounds about right...
You can make a roux. Use some Onion chopped small and simmer in Butter or EVOO, til tender. Sprinkle some flour and Garlic Powder,all over the onions. Add some Chicken Stock simmer til it thickens.
You can serve the Chicken on cooked rice and pour this over the top of everything.

Here's the recipe I use, but what do I know, I like pancetta and provolone instead of ham and swiss cheese? The sauce is really good though (psst, double the sauce).
Chicken Cordon Bleu II (from Allrecipes)
INGREDIENTS 6 skinless, boneless chicken breast halves 6 slices Swiss cheese 6 slices ham 3 tablespoons all-purpose flour 1 teaspoon paprika 6 tablespoons butter 1/2 cup dry white wine 1 teaspoon chicken bouillon granules 1 tablespoon cornstarch 1 cup heavy whipping cream DIRECTIONS Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.
4 skinless, boneless chicken breast 1 cup Italian seasoned bread crumbs 4 slices Swiss cheese 4 tablespoons butter 4 thin sliced smoked ham ½ cup chicken broth ¼ cup all-purpose flour 1 cup heavy whipping cream 1 egg; beaten salt, pepper & garlic powder
Pound chicken breast to ¼-inch thickness. Sprinkle each piece on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on each breast. Roll up each breast using toothpicks to secure if necessary. Dredge each in flour, shake off excess, then in egg and finally in bread crumbs.
Place seam side down in baking dish that has been sprayed with Pam. Place 1 tablespoon butter on each piece of chicken. Bake at 350° for 35 minutes until juices run clear.
Meanwhile, in a saucepan, reduce broth by half over medium heat; add cream and simmer over low heat until thickened; season to taste with salt, pepper and garlic powder. Pour over chicken.
