reconfiguring foods

yeah--i know i'm really just talking about making leftovers into something else. terry (pacnw) had mentioned recently that she was tired of tossing out food items and determined to do something and i know i could use help with that too. ted is usually quite happy to take dinner items for lunch and i will too BUT! there is a limit... so, any interest in posting what we've done recently?

last night i made a new baked chicken casserole recipe that was pretty blase to start with (ie: i've already deleted the recipe--too many foods and not enough time to try all the recipes i have much less keep a mediocre one...) but i don't want to waste a few chicken thighs so either i'll bone it out and make a stock and eventually add the meat back in to make soup, or perhaps i'll just bone it and make one of ted's favorites--hot chicken casserole!

the other night i made lpink's baked greek pasta--we loved it (and thank you again!) so much that we ate more than was really good for either one of us, and only had about 1/4th of it leftover, which really wasn't "quite enough" IMO. so, i added some chicken broth and some defrosted spinach and heated that through, and stirred in a few black olives just before serving. we thought that was great too! so--what ideas do you have to offier?
