Can someone please give me the link to these? I remember drooling over the recipe but now I can't find it. I saw they were on the menu for the forum get-together, but I didn't see the recipe.
And then there are Dorie Greenspans Muffins. I made these 2 weekends ago..Yummm
These morning muffins provide you with coffee to go with your coffee.
COFFEE-BREAK MUFFINS
2 cups all-purpose flour
1/3 cup sugar
1 tablespoon instant espresso powder
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/3 cup (packed) light brown sugar
1 cup strong (or decaf) coffee, cooled
1 stick (8 tablespoons) unsalted butter, melted and cooled
1 large egg
1/2 teaspoon pure vanilla extract
Center a rack in the oven and preheat the oven to 400 degrees. Butter or spray the 12 molds in a regular-sized muffin pan or fit the molds with paper muffin cups. Alternatively, use a silicone muffin pan, which needs neither greasing or paper cups. Place the muffin pan on a baking sheet.
In a large bowl, whisk together the flour, sugar, espresso powder, baking powder, cinnamon and salt. Stir in the brown sugar, making certain there are no lumps. In a large glass measuring cup or another bowl, whisk the coffee, melted butter, egg and vanilla extract together until well combined. Pour the liquid ingredients over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend. Don't worry about being thorough -- a few lumps are better than overmixing the batter. Divide the batter evenly among the muffin cups.
Bake for about 20 minutes, or until a thin knife inserted into the center of the muffins comes out clean. Transfer the pan to a rack and cool for 5 minutes before carefully removing each muffin from its mold.
Jo, this is the recipe I used, all of them look pretty similar, I think. Mine is from an old "Best Recipes" book by Better Homes and Gardens. I used some espresso powder from Melly and the mini chips in mine, but I left the nutmeg out.
They are Ashley's favorites, I made them mini-muffins and she grabs a handful from the freezer and goes to school.
PREPARATION: Preheat oven to 375 degrees F. Line muffin tins with papers or grease liberally.
In a large bowl, whisk together flour, sugar, baking powder, espresso or instant coffee, salt, cinnamon, and nutmeg. Set aside.
In a medium bowl, mix milk, butter, egg, and vanilla until combined. Stir milk mixture into flour mixture only until combined. Do not overmix. Fold in chocolate chips.
Fill muffin cups 3/4 full. Bake 15 to 20 minutes for standard muffins, 10 to 12 minutes for mini-muffins.
