Ok, we have gone through 2 tubs in about a week. With 4 kids, and the tubs costing about $12/each, I think I need to learn to make this. I don't want a dark caramel popcorn, but rather a golden caramel. If anyone is familiar with Fisher's popcorn (found in MD and DE) and has a good copycat recipe, I would *love* it!
Here's the recipe I use....and dark brown sugar gives a darker flavor...light brown sugar a lighter taste...
Caramel Corn 2 cups brown sugar 2 sticks butter ( 1 cup) 1/2 cup white Karo syrup 1/2 stp salt Combine and boil the above for 5 minutes. remove from heat and add 1/2 tsp soda and 1 tsp vanilla and a pinch of cream of tartar. Pour over 18 to 20 cups of poppes corn in a roasting pan. Stir!! Bake one hour at 250 degrees, stirring every 15 minutes. When done spread out on waxed paper or cookie sheets and cool.
I made this a couple of days ago. It is wonderful as soon as it is made. But it doesn't store well.

Salted Caramel Popcorn ======================
Source: Fare to Remember Blog
1/2 cup butter 1 cup packed brown sugar 1 cup corn syrup 1 14-ounce can of sweetened condensed milk sea salt (I used Murray River Flake Salt)
Combine all caramel ingredients in a saucepan over medium heat. Bring to a boil, stirring to melt and blend all ingredients together. Reduce heat to low and continue a slow boil; stir constantly to avoid the caramel from burning. Caramel is done when it reaches the soft ball candy stage (approximately 10 minutes at slow boil). While still hot, pour caramel over a big bowl of popcorn, mixing well to coat. Sprinkle liberally with the sea salt, again, mixing well for even coverage throughout the batch.
Ann, that one looks delicious. And I'm not sure, with 4 hungry kids, that I need it to last. But I think I'm going to try Linda's recipe first (reminds me of the caramel cheetos) and see how that goes over, then try yours. Both seem scrumptious. Thanks for the ideas, Susy and Trixie!
A caramel corn that will last more than a few hours without getting soggy. needs to either be baked or coated with a sugar syrup that has been cooked to the almost hard crack stage. Other wise the corn will "sog out"....note the scientific term!!
Terri's recipe is the same as mine...but halved!! I say as long as you are making...make a lot! t keeps well in an air tight container....and makes a great little gift. Linda C
I will be making alot. The four kids love it. But darn it, I keep drooling over Ann's picture above, imagining cashews mixed in. Maybe a small batch of that for me, since it goes soft, and large batches of the other for the kids :)
I have to say that after reading this thread, I ended up making Linda & Terri's recipe last night, but reduced it (to 1/4 of the recipe) due to the amount of popcorn I knew we had. Hubs and I enjoyed it, and there was nary a kernel of popcorn left!
25 minutes till the kids get home. Will the 20 cups of caramel popcorn last till then? I'm a little worried, cuz I can't stop eating it, lol! Never buying it again!
I'm going to try the recipe Ann posted next. Do you think I can bake it like Linda & Terri's recipe, so it won't be soggy?
ann's recipe is a whole different thang...LOL! The baked one is more like Poppy cock. Because ann's had 4 times the amount of corn syrup and a can of condensed milk, it will never be hard. It's more like popped corn coated with melted caramels....not that that not wonderful....but not after even 4 hours!
