Found a couple of really good apple recipes.

I have so many apples coming in right now so always looking for a new and good recipe. I made these recipes over the weekend and they were a big hit. Just thought I would share.

The Sour Cream Apple Squares were great as a dessert but also for breakfast with coffee. They are still moist 3 days later. I cut the recipe in half and used a 9" square baking pan and it worked fine.

Sour Cream Apple Squares

INGREDIENTS

2 cups all-purpose flour

2 cups packed brown sugar

1/2 cup butter or margarine, softened

1 cup chopped nuts

2 teaspoons ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

1 cup sour cream (or plain yogurt which I used)

1 teaspoon vanilla extract

1 egg, beaten

2 cups chopped, peeled apples

Whipped cream or vanilla ice cream

DIRECTIONS

In a mixing bowl, combine flour, brown sugar and butter; blend at low speed until crumbly. Stir in nuts. Press about 2-3/4 cups into the bottom of an ungreased 13-in. x 9-in. x 2-in. baking pan. To the remaining crumb mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg. Beat until thoroughly combined. Stir in apples. Spoon evenly over bottom layer.

Bake at 350 degrees F for 35-40 minutes or until cake tests done. Cool on a wire rack. Cut into squares. Garnish with whipped cream or ice cream if desired.

Regarding the pork chops, DH kept going on how good they were during the meal and he usually doesn't do that. They did come out very moist and tender.

Microwave Pork Chops with Apple Stuffing

4 pork loin chops, about 1/2" ea. (1" chops worked, cook for the same amount of time)

Paprika

2 cups herb dry stuffing mix (I used corn bread stuffing mix)

1/2 cup apple juice

2 tablespoon butter or margarine, melted

1 medium unpared all purpose apple, finely chopped

1. Arrange pork chops, meaty parts to outside edges, in square or rectangular microwave dish. Sprinkle with paprika.

2. Mix remaining ingredients. Mound in center of dish. Cover tightly and microwave on medium (50%) 20-23 minutes. Rotate 1/2 turn every 7 minutes, until pork is done (170 deg.).

405 calories per serving.

NOTES: I know it doesn't sound like enough liquid for that amount of dry stuffing mix but it is so resist adding more. And I browned them quickly in a pan before baking in the microwave so they looked better.
