ISO:Sugar free frosting recipes

My DGD has started a cupcake business and she has been asked if she can make cupcakes with sugar free frosting.

So far she has tried products such as Splenda, but the results are not very good.

I have googled and found even though some recipes say no sugar, it is listed.

I know there are several KTers who are diabetic. Is it possible to make a good frosting without sugar or Splenda, etc?

I would try a few cream cheese based frostings, using either equal or pure stevia (powder or liquid). If she is making different flavors of cupcake in addition to the frostings she might experiment with davinci syrups, they don't have the nasty alcohol aftertaste that many do.

There is a product that is like a non dairy whipped cream. Pastry Pride and Flavor Right are two brands. You whip it up like whipped cream but it has the consistency of icing. It tastes fine on it's own and is extremely low sugar and dairy free. You can flavor it with cocoa powders,pudding mix or custard mix. You can even mix cream cheese into it. I use it more for fillings ( makes a lovely custard) than I do icing since everyone loves my buttercream. But it does taste good and is extremely stable. It pipes well. You can freeze the unwhipped and even freeze it whipped. It can be left out at room temperature even in warm conditions for 24 hours and remain stable.It does tend to crust however after a longer time out.

If I can't use buttercream for some reason I use it. It is excellent in hot weather.

The only icing I can't stand is fondant. It looks good and you can look like an artist without too much practice creating fabulous "looking" cakes but I prefer not to have to chew my icing. LOL

Recipes from "The Complete Food Allergy Cookbook" by Marilyn Gioannini. COCONUT PECAN FROSTING (15 minutes - Frosts two 8- or 9-inch layers - also soy-free if you use vegetable oil instead of margarine) 1/4 c. margarine or vegetable oil 1/2 c. honey 1/2 c. water or rice milk or other milk substitute 1-1/2 t. arrowroot powder 1 c. chopped pecans or walnuts 1 c. unsweeetened shredded coconut 1 t. vanilla (optional) Put margarine and honey into a small saucepan. Mix 1/4 c. of the water or milk substitute with the arrowroot until smooth. Add the arrot mixture and the other 1/4 c. water or milk substitute to the saucepan. Bring to a boil over medium heat. Cook and stir over medium heat for about 3 minutes. Remove from heat and add pecans, coconut, and vanilla. Beat briefly and frost cake while frosting is still warm. Makes enough for two layers (tops only) or a 9x13 cake. 1/12 recipe: calories-156, protein-0.9, carbohydrates-15.2, fat-11.1 g, sodium-60.9 mg, fiber-0.7 g --------------------------------------------------- CREAMY MAPLE FROSTING (20 minutes - 12 servings) 2 (10.5-ounce) packages silken tofu 1/3 c. cashews, or other nuts 6 T. maple syrup 1 t. vanilla (optional) 1/2 t. cinnamon (optional) Remove tofu from package and cut into slices. Place in steamer basket in saucepan and steam 5 minutes. Drain between several layers of cotton toweling for at least 15 minutes to remove all the excess water. Scrape the sides of the continer often. Chill before spreading on cake. Makes enough for a 2-layer cake. I have made this white cake for years.....but not FOR years if you get what I mean....what I mean was that it was an old favorite when I baked birthday cakes more often. ICE CREAM CAKE 2 cups sugar 3/4 cup butter 2 cups sifted flour 3 tsp. baking powder 1 cup sifted cornstarch 1 cup milk 1 tsp. almond or vanilla extract 5 stiffly beaten egg whites Cream sugar and butter together. Sift the flour, baking powder and cornstarch together. Alternate adding these to creamed mixture along with milk. Beat until very smooth. Add vanilla and then fold in egg whites that have been beaten until stiff. Bake in 2 greased and floured 8" round cake pans for 25 to 30 minutes in a 350 degree oven. Frost with Boiled White Icing. Or....since he specifically asked for "vanilla cake, I might fill with a vanilla pastry cream and then top with that frosting where you mix egg whites, sugar and syrup in a double boiler and cook beating all the while until it's thick and holds it's shape Here's what I have for a flourless chocolate cake.....came from this forum many years ago... It is kind of like a cake textured hot fudge sauce served in slices. VERY rich - so cut in thin slices. Killer Chocolate Torte 2 cups unsalted butter (4 sticks) cut into 1/2 in. pieces 1 Cup plus 2 tablespoons sugar 1 Cup plus 2 tablespoons espresso powder 16 ounces bittersweet chocolate, chopped (NOT unsweetened or semisweet) 6 large eggs at room temperature 6 large egg yolks at room temperature powdered sugar for garnish whipped cream (optional) Position rack in the middle of the oven and preheat to 325 degrees. Generously butter an 8-inch springform pan with 2 3/4 inch sides. cut parchment or wax paper to fit sides, and, and a circular piece to fit in the bottom of the greased pan. Smooth paper against inner surfaces. Melt 2 cups butter with the sugar and espresso powder in a heavy saucepan over medium low heat, stirring until the sugar dissolves. CAREFULLY fold into the chocolate mixture. Pour batter into prepared pan and place on a heavy baking sheet. Bake in the preheated 325 degree oven until the edges puff and crack slightly but the center is not quite set. Transfer to a rack and let cool. Cover with foil and refrigerate overnight. to remove from pan, dip a sharp thin knife in hot water and run it around the sides of the pan to loosen the torte. Carefully release and remove the pan sides and the parchment. It will have cracks in it, but this is normal. Sprinkle lightly with powdered sugar (if desired) and cut into very thin slices with a sharp knife dipped into hot water, taking care to wipe the knife after each cut. Serve with whipped cream if desired. Many servings.

I honestly feel that there is no such thing as lowfat or low sugar cream cheese icing! That's why if I want to really cut calories I make my carrot cake in a bundt pan and then just lightly dust with confection sugar before serving, makes a lovely impression. Can also make as a flat cake and put a paper doily over the cake and then dust with confection sugar and then take the doily off for a nice effect. Carrot cake is very moist and doesn't need icing. Serve with ice milk or tofutti if you still need something creamy. Can also top cake with a pudding or cornstarch thickened fruit sauce after serving. That's low fat but not low sugar.

One more thing...

Unlike buttercream which you whip up using a paddle the non dairy cream beats up using the wire whisk attachment. You need to incorporate air. One quart of liquid beats up into 5 quarts of icing.

Wildchild, Where do you find that in the grocery store?
Is it liguid and found in the refrigerator area or the baking section?

I have never seen it in grocery stores. You find these types of products in bakery supplies and cake decorating stores. I think you may be able to find Pastry Pride at Smart and Final. I have seen it there in the past. Places like Costco may have it. It would be in the refrigerated or freezer section. The Pastry Pride comes in a carton like milk or whipped cream does. Cake decorating places buy huge vats of these products and sell it in plastic containers either frozen or liquid, usually by the pint or quart.

Sugar-Free Frosting
Prep Time: 30 Minutes Ready In: 30 Minutes
Servings: 12

"Versatile cream cheese frosting flavored with sugar-free instant pudding. It will frost one 9x13 or one 2 layer cake. Use any flavor of pudding mix."

1 (1.4 ounce) package sugar-free instant pudding mix
1 3/4 cups milk 1 (8 ounce) package cream cheese
1 (8 ounce) container lite frozen whipped
topping, thawed

1. In a medium bowl, combine pudding mix and milk. Mix well and let stand until thickened.
2. In a large bowl, beat cream cheese until smooth. Add pudding and mix well. Finally, fold in whipped topping.

Pillsbury now makes a sugar free frosting in Chocolate and Vanilla it comes in a can just like the regular frosting. I found it in Wal-Mart around the holidays.
If I remember right it was just about the same price as the regular frosting.
