I will be out of town next week moving my son into college. We will fly home and get back just in time for Kol Nidre dinner before temple. We will be gone for 4 days. I am looking to cook the dinner this weekend, freeze it and cook it frozen when we get back. I am going to make motzah ball soup which I can always microwave. Any ideas for some kind of dish (preferable chicken) which I will be able to cook frozen? My alternative is taking it out of the freezer Monday morning before we leave and leaving it in the refrigerator to defrost but I am afraid that is too long. It is only my DH, DD and me so it doesn't have to be perfect.
Thanks!
