Monterey Jack Cheese

I have a large block leftover from a recipe-Any ideas on how to use it up, besides just nibbling on it? I could make the recipe again, but it's really just grated on top.

I like Jack cheese..so use it anywhere you would cheese...add a bit to mac n cheese..Grate it and freeze it.
Then you can pull bits out as needed. (but only to heat up) Won't have a great texture to eat raw, once frozen)

MJ Cheese can be wrapped in plastic wrap and placed in a zip-lock freezer bag to be frozen. The problem is it will get crumbly when defrosted, but you can still cook with it.

Have a great time Laurel! I haven't tried this yet, but sure thought it sounded good!I'm not sure where I found it. We had this tonight on grilled chicken wings, it was delicious! Very easy to make, I used a stick blender instead of a food processor. It's a really good sweet-hot (not too hot!) sauce! Chipotle-Cherry Barbecue Glaze 2 tablespoons unsalted butter 1 medium onion, finely chopped 8 ounces cherry preserves (3/4 cup) 1/4 cup minced seeded chipotle chile in adobo sauce 1/4 cup ketchup 1/4 cup cider vinegar In a small saucepan, melt the butter. Add the onion and cook over moderate heat, stirring occasionally, until softened, 5 to 6 minutes. Add the remaining ingredients and cook over moderate heat, stirring, until bubbling, about 5 minutes longer. Transfer the mixture to a food processor and process until fairly smooth. Transfer to a bowl and let cool before using. The glaze can be refrigerated for up to 2 weeks. NOTES : Use this spicy, smoky, sweet barbecue sauce to glaze grilled meat or poultry in the last few minutes of cooking. It can also be served on the side. from Food and Wine June 2005

Cheese enchiladas

or Chile Relleno Puffs - use all monterey jack instead of the extra cup of cheddar:

These are so good & can be made ahead! Very addicting!

Chile Relleno Puffs

1/4 c. butter, room temperature
1 1/4 c. flour
1 1/2 c. monterey jack cheese, shredded
1 c. cheddar cheese, shredded
1 small can diced green chiles
- diced jalapeno to taste (jarred or fresh)
1/4 t. garlic powder
1/4 t. dry mustard
1/4 t. paprika
1/4 to 1/2 c. parmesan cheese

Mix butter and flour in a mixer until blended.
Add cheeses, green chilies, jalapenos, dry mustard, paprika and garlic powder, mix well. Roll dough into 3/4 inch balls, roll in Parmesan cheese. Place on a greased baking sheet and put in the freezer for about 30 minutes before baking. Bake in a 375Âº oven about 15 to 20 minutes, until golden brown. Great served with hot sauce!

I usually double this recipe & freeze the balls stored in Foodsaver bags. Bake right out of the freezer for about 20 minutes at 375Âº.

Grate it over some nacho chips and broil for a few seconds until melted. Dip in salsa.

I would say freeze it too.Vacuum seal if possible and I have had no problem with the texture being different when it is thawed.Might not be the same if frozen in the whole block.

If you can vacuum seal it, it will last for months and months in the fridge.

Monterey Jack is my favorite cheese. It wouldn't last long here. Use it to snack on, on burgers, grated on salads, garlic cheese bread, on sandwiches, in an omelette,in Monti Christos,on pizza and wherever you would use any other cheese that melts well.

The best grilled cheese sandwich is made with jack cheese.IMHO

I toast extra sour dough bread,butter it then slice jack cheese on it ,then zap in the microwave for 35 seconds,YUMMMMMMMMMMMMMMMMMMMMOOOOOOOOOOOOOOO.

use it any way you would cheddar, for a tangy difference...

jack is the base i use for a dip, that includes jarred salsa, combined with fresh ingredients...

Tasty Cheese balls

3 cups of finely grated Jack cheese
2 beaten egg whites..JUST until stiff
dash salt
cayenne pepper (at least 1/4 tsp..but to taste)
1 Tbs chives
1 egg beaten with a little water
Italian flavored bread crumbs

Place the first 5 ingredients in a bowl, mix well with your hands. Put crumbs in a flat pan. Also line a cookie sheet w/waxed paper. Roll cheese mixture into bite sized balls & roll thru the egg, then into the bread crumbs, pressing firmly. Place on cookie sheet & place in freezer until frozen. At that point you can bag them up to remain in the freezer OR, to serve-place on baking sheet and bake in a 400Âº oven for 7-10 minutes until hot.
